too many bananas...recipe?

Last week I made a pretty healthy chocolate chip cake with my extra bananas, and unfortunately....I have too many ripe bananas again this week....looking for your favorite recipes for ripe bananas...please

If they're not too ripe (peel still has some yellow & they're not too mushy), I would peel the banana, cut it into pieces, wrap it in wax paper and stick it in the freezer. When it's frozen, it tastes like ice cream!

I usually just throw them in the freezer and then thaw them and use them for recipes at my leisure.  They make awesome smoothie bases, and I think you can substitute them for oil just like applesauce.

 Also, I sprinkle them with cinnamon before I eat 'em :)

If they are super ripe, make muffins! My recipe mixes one large super ripe banana with one egg, a heaping tablespoon of honey, a teaspoon of baking power, optionally a little vanilla extract/a tablespoon of cocoa, add flour (I use all whole wheat) until the texture is right and bake at medium heat. Makes about 6 smallish, healthy servings deliciousness. Feel free to scale it around and play with it.

My favorite recipe for bananas -

Blend the following:

- 2 bananas, cut into pieces and frozen

- 1 tsp honey

- 5 oz Almond Breeze unsweetened Vanilla

- 1 serving vanilla whey/soy protein powder

Makes a DELICIOUS and healthy banana shake!

Another thing to do with ripe frozen bananas: Chunk them up and toss them in a blender with low fat milk, and either a shot of chocolate or vanilla. Blend it up and you have a healthy milk shake. My kids love them, too!

i stick my bananas in the freezer. when i buy bananas there are always one or two left that are too ripe to eat, so i put in the freezer. when i get a bunch in the freezer i make banana bread. it isn't a diet recipe, but i figure if you just have a slice or make muffins and have one muffin it is ok. i have a family that is not dieting that loves them, so i make for them mostly. if you put in the freezer, then when they are defrosted you just take scissors and snip off the end and use two per recipe and you don't have to mash much because they are so soft already. if u want i can post my banana bread recipe, makes a really really moist banana bread. sometimes i make as a loaf, sometimes as muffins.

Best ever Banana Bread

Can make into muffins too instead of loaves

¼ cup butter or margarine

1 cup granulated sugar

2 eggs beaten

1 cup of mashed ripe bananas or (3-4 very ripe bananas that you kept in the freezer and thawed out)

2 tablespoons baking powder

1 teaspoon vanilla extract

¼ cup milk

1 teaspoon baking soda

2 cups of flour

¼ teaspoon salt

-Cream butter, add sugar, eggs and then bananas. Add vanilla and beat well. Dissolve soda in milk and add alternately with the rest of the ingredients. Bake in greased and floured baking pan or loaf pans or paper lined muffin tins.

*Chopped nuts may be added optional

*Chocolate chips may be added optional

Banana Coffee Cake

Very versatile recipe. You can use any fruit here. Even though the recipe comes from a vegan web site, you can easily substitute non-vegan ingredients, or even add chocolate chips. This cake is awesome.

I am one of those cooks/bakers....I really do not measure much, but in general here are the ingredients and about what I did:

Whole wheat Flour  50%

Old Fashion Oats  50%,

I added about Tsp of baking soda and powder, salt and vanilla

2 eggs

lots of bananas!  I mashed them up first in my big bowl than added everything else and mixed until the consistency seems right for a batter....may need to added more oats/flour if your bananas make it too moist.

Than I added chocolate chips stirred again and put in a pan that I buttered.

Baked at 375  for about 20 min....watch it....seems fast.

Now I know I shouldn't but i did....when done I sprinkled chocolate chips on top pop in oven again for minute or so, take out use the back of a tablespoon and spread the chocolate chips....my kids really like it.

Dear 5327, I don't have a recipe for you but, I do have an idea.  When my banana's get pretty ripe before I get a chance to use them I peel them and put them in freezer bags and freeze them for use in smoothies.  They keep for like a year in the freezer.

Or you could put the frozen bananas in smoothies, like others have said. I love making pina coladas with frozen bananas, coconut milk, and pineapple. I also like chocolate-banana smoothies.

 I don't have any new ideas for riping bananas, but can I get your "pretty healthy chocolate chip cake" recipe?  :)  Thanks!

One thing to always do with bananas is to break them apart at the stem when you get them home.  They don't ripen quite as fast. 

The other thing I do is freeze bananas that have been pealed and cut in half and use them for smoothies.  I take them out as I need them and they make the smoothie colder and tastier. I find they do better in freezer plastic ware rather than plastic bags and last up to a month. 

I freeze them and use them later for smoothies, or just break off some of the extra ice pieces and mash a few slices of frozen bananas on toast!  The possibilities are endless with frozen fruit--I live by it!

What is the 50% for the flour/oatmeal????
