THE BEST 100 cal stevia banana bread!!!

Quote  |  Reply
I was craving banana bread SOOOOO bad the other day so I made some adjustments (replaced oil w/ applesauce, sugar w/ steevia, white flour w/ whole wheat) to an old banana bread recipe I had and I came up with this SPECTACULAR recipe (ONLY 100 cals per 5-g slice!)

Wet Ingredients: 2 eggs 2 over ripe mashed bananas 1/3 cup milk 2/3 cup unsweetened applesauce 1 tsp vanilla extract 1 tsp cinnamon 1/2 tsp nutmeg

Dry Ingredients: 2 1/4 cups whole wheat flour 1 tsp Stevia powder 1 tsp baking soda Salt

Mix them togetehr seperately, and them fold the two together. Bake in a 9x5 bread pan @ 350 for about an hour YUMMMMMMM!

Did you use skim?
I wonder if you can do 1 egg + 2 egg whites?
Sounds great

Of the total bread, how many slices do you yield?  And, what does 5oz look like?  I'm waiting for my food scale to arrive, but I absolutely will try this banana bread.  Thanks for posting.

Sorry, I messed up. It's 100 cal per 50 gram slice. It just looks like an average slice of bread. And yes, I did use skim milk, just forgot to write that too! :) P.S. You will absolutely LOVE your food scale! I have one and i use it like, 1000x a day!
When I got my herbs this spring, I got a stevia plant.  The fresh leaves taste something like honeysuckle and just a few will sweeten a cup of tea.
You can BUY the plant?? Yum!
Yes.  I got mine from an Amish family that sells herb plants in the spring.  I was surprised to see it among their other herbs.  I asked and the woman told me it's called "sweet herb" by them.
Does stevia have an aftertaste? How would you all compare it to other non-sugar sweeteners?

I hate artificial sweeteners. Splenda tastes gross to me. Can't do equal. Sweet n low is passable. I get a headache and stomachache from diet pop.

I really like steevia. You can't use too much of it to make something taste as sweet as sugar would, and if you use too much, you do get a little aftertaste, but it's not that bad. I also cant stand splenda, and besides, steevia is an all- natural plant, all other sweetners are full of chemicals, and i feel so bad when I eat them. in my opinion, there's no comparison to it! :)

To me, stevia has more of a before-taste than an after-taste. It's kind of a sharp taste when you first taste it, I've heard it described as licorice-y (but I can't stand licorice and I do ok with this stuff). After that goes away, it's just sweet to me. Also, I've mixed it with things like sour cream, cottage cheese, fruit, and I really like the way it tastes mixed with stuff. Maybe takes some getting used to? I'd say worth a shot (and a bit of open-mindedness :) )
