bland hummus help

Quote  |  Reply
I don't like my own bland hummus.  I think when I buy it my favorite is garlic hummus.  There seems to be the "bite" that raw garlic has.  I scanned the recipes here and am trying one with 1/2 C lemon juice and 6 cloves of garlic, etc.

Does anyone have any recommendations for a strong flavored hummus?

Or, what's the most garlic you would use?

thanks

Just keep adding a clove until it tastes right to you   :)

I also like hummus with horseradish - yum!

I get the three pepper, spicy at the store - you could probably do something with some pepper flakes, I'm thinkin'. Maybe some sun-dried tomatoes and basil ...dunno if it would blend sufficiently smoothly, but I bet the flavors would be good.
ooo that sounds good, nomo :)
thanks, both of you.

Love horseradish but wouldn't have thought of that.

A few pepper flakes would help also.

I see, highlighted a video at the top here, but with dialup, can't watch videos :(

You could also try jalapenos - either picked or fresh, or a tiny bit of cayenne pepper if you like spicy.

You could also try using roasted garlic if you don't like the "bite" of raw garlic. It's pretty easy to find a recipe to roast your own.

just made it and its very good....but my eyes are practically watering and I don't dare breathe around anyone or they'd pass out.

I can't believe the calories in this.  With the recipe analyser I'm getting 500+ for a mere 1/4 Cup.

I like to add some roasted red pepper. You can buy it in a jar or sometimes from olive bars in the deli section if you have one.

I like the milder, sweeter taste of roasted garlic in mine.  Lemon juice is my favorite way to perk up flavors, and I always add fresh minced parsley.

Have you ever made it with sun dried tomatoes and basil?  Nice!

I'll try roasted garlic next time............for comparison.  Yes, I love sun dried tomatoes, but didn't have any on hand.  thanks.

cumin is a good spice to use too

I always add a few drops of hot sauce. I also really like chipotle peppers in adobo sauce in it.

Also you need to give it a day to feel the heat/bite. I have added more hot sauce only to find on the next day I need to add yogurt to tone it down.

I use up to 12 cloves of garlic (depending on size) in my hummus recipe that only uses 1 can of chickpeas.  When I have time, my favorite is to use half roasted garlic and half fresh.  Then you get a really well-rounded garlic flavor.  I also add paprika, which adds color and flavor.

I just bought some cumin.  since giving up salt, I use more spices.

That's somethng I didn't think of........letting it set a day.  Makes sense.

Aha, 1/2 roasted and 1/2 raw garlic sounds interesting.  I'll try that also.

I love it and am going to keep making it till this Tahini is gone, then I may give it up as all the calories in the Tahini is just depressing.  I used 1/2 Cup of Tahini to my 15 oz of chickpeas.  Of course, with the other suggestions of garlic, maybe I can use less Tahini and save calories.

thanks everyone.

I use plain hummus (2 tablespoons), add to it 2 tablespoons of plain, fat free yogurt, a dash of lemon juice, and some no salt lemon pepper seasoning.  Not too spicy, but delicious!  And you still get the taste of the hummus, but a larger portion and less calories!  It's wonderful with red peppers, cucumbers, celery, and baby carrots--one of my favorite snacks!

I also make a hummus that isn't really hummus because I don't use tahini. I guess you could call it a chickpea dip that looks similar to hummus. I just use chickpeas, some italian dressing and then I add to it. It's much lower calorie and I don't miss the tahini.

that doesn't sound right! most commercial hummus is very low cal, only 25 calories per tablespoon!

sweetblea:  I probably used too much Tahini, trying to get more flavor.  I used 1/2 C.  it says 2TBL have 180 calories............so its as bad a peanut butter.  Next time I will cut that in half.

oh yes.........the raw garlic DEFINATELY got stronger overnight.  I wanted flavor and I got flavor.......whew!!!

I'm from the Middle East, and we usually eat our hummus topped with a little bit of olive oil and paprika, or zaatar (I think this is "hyssop" in English). It's very good!

I'll second that. Roasted red pepper hummus is delicious.
And I agree... the calorie content for your hummus sounds insanely high! I've made hummus without tahini before and it was fine.

I buy a roasted garlic hummus at my local grocery store. It's HEAVEN, between my mom and I - we go through a whole box of crackers and a whole tub of this stuff in 3 days!
