What can I do with Cottage Cheese

I bought some Cottage Cheese and I can't get it down. Ewww, I can't stand it! I added some sweetener to it, that didn't work, so I added some cinnamon. Stiill no go.
Any ideas what I can do with it, or what else I can eat to bring my protein up seeing that I don't like dairy to much?

Turning low fat cottage cheese into salsa/spicy dip sounds fantastic - I'm going to try that, especially with the sliced tomato thing.

I've been trying to find ways to eat salsa without any chips anyway, besides dumping it on my meat.

hmm.. it's funny, I LOVE cottage cheese, even the lower fat stuff. I just switched down to 1% fat milk from 2% and it still actually tastes pretty good. Maybe my taste buds are adapting.
I usually stir some cottage cheese in with my spaghetti sauce. YOu can use it instead of meat or as a substitute.
It's actually quite good as an open faced sandwhich. Toast some multi-grain bread, top with cottage cheese then slices of tomatoe and salt and pepper. Mostly you taste the bread and tomatoes. Yum :-) I've also used it in place of sour cream since I don't like the taste of non-fat sour cream (on top of a taco salad with out the corn chips etc.)
As an experiment yesterday, I dumped some powdered sugar-free hot chocolate mix into my cottage cheese cup, because I remembered that as some kind of desert recommendation in a south beach diet book, or atkins or something.

It was pretty disgusting.
I make a smoothie

start with 1/2 cup nonfat milk
1/3 cup 2%milk
frozen fruit of choice
dash of vanilla
sweeten with splenda to taste
buzz up in a blender


lots of variables
1/2 frozen banana/and tiny bit cocoa
berries
frozen homemade applesauce/cinnamon/splenda..tastes like applepie

You might just quit cottage cheese all together...I'd much rather eat lowfat plain yogurt with cinnamon, sweetner, blueberries...or strawberries, mandarin oranges or grapes...or all of the above...The cinnamon is really good with blueberries...oh and do add a speck of vanilla extract...it really makes a huge difference.

Karen, I tried this this afternoon, but I used fresh strawberries.
I absotuetly LOVED it!

My husband uses cottage cheese instead of salad dressing. Don't forget the chickpeas and kidney beans on the salad too for protein. Make sure your counting the protein in your oatmeal. I wouldn't push dairy if you don't like it--many people have sensitivities and allergies to dairy which may be the underlying cause of a variety of other things like respiratory infections.

I haven't tried this yet, but it sounds good. Then again, I love cottage cheese... I'm thinking that it ends up similar to yogurt.

Ingredients:
3/4 cup low fat, low sodium cottage cheese
1 packet of SPLENDA® sweetener
1/4 tsp. vanilla extract
1 cup sliced fresh strawberries
1/2 cup fresh blueberries
1/4 cup blackberries
1 1/2 tbsp. chopped walnuts

Directions:
Place cottage cheese with Splenda and vanilla extract in a blender and process until smooth. Place blended cottage cheese in a bowl and top with berries and chopped walnuts. Serve.

I have an awesome recipe for a dessert that uses cottage cheese. It is called Dieter's Delight.

1 (32oz.) container fat free Cottage Cheese
1 (16oz.) container Cool Whip Lite
1 large box Orange jello
1 large can crushed pineapple, drained
2 small cans mandarine oranges, drained
- Crushed Graham crackers, Nilla Wafers or chopped nuts for garnish, if desired.

-In a large bowl, mix cottage cheese and powdered jello until well blended. Drain mandarine oranges and crushed pineapple and add to mixture, mixing well. Fold in Cool Whip. Spread out into a 13x9x2 inch casserole/baking dish. Refrigerate for at least 2 hours before serving. You can sprinkle chopped nuts, crushed grahams or Nilla Wafers ver th jello as a garnish if you desire.

this sounds really weird but it didn't taste too bad--yesterday i mixed a half cup of nonfat cottage cheese with a small can of light tuna, and put it on whole wheat bread for lunch. it was surprisingly tasty. really high protein, and very low fat. bonus: my "analysis" for yesterday was the best ratio i've had since early january: 50 carb 40 protein 10 fat.
I actually picked up some low fat cottage cheese also and have no idea what to do with it. I was planning on dipping some type of fruit in it. I'm trying to get my protein up also. Elin, I want to try your tuna recipe. How much cottage cheese and tuna did u mix? I have an 8oz container of cottage cheese and a can of 6oz tuna; do I mix all of that together? That would be about 3 servings (I think).
Elin, I do the same thing with cottage cheese: mix it with tuna. I love it! I don't put it on bread because I usually have enough carbs. I struggle with protein so I eat a lot of cottage cheese and tuna. And almost no fat if you use fat-free cottage cheese. I thought I had weird taste!
Okay, so I tried my cottage cheese last night. Yucky! But then I put about a tbalespoon's worth in my fat free cup of jello and it tasted good. I'm gonna try the Tuna recipe today.

pocahotass, i used 4 oz of cottage cheese and 6 oz of tuna. but i am sure the proportions don't matter that much. but i do weigh most things now. finally!
Thanks Elin. I just bought a scale to weigh my portions on, so I'm kind of obsessive about it. lol. I'm gonna try this for lunch today; I'll let you know what I think! Thanks.

I found a recipe for cottage cheese pancakes... I've had it saved for a while since I saw it on a pbs cooking show. I haven't tried it yet but here it is:

Cottage Cheese Pancakes
Serves 4 | Prep time: 10min | Total time: 25min


ingredients:
3/4 cup all-purpose flour (spooned and leveled)
1 tablespoon sugar
3/4 teaspoon baking powder
1/4 teaspoon baking soda
3/4 cup low-fat (1%) cottage cheese
2/3 cup milk
2 large egg whites
1/2 teaspoon vanilla extract
5 teaspoons vegetable oil


  1.  In a large bowl, stir together flour, sugar, baking powder, and baking soda. Stir in cottage cheese, milk, egg whites, and vanilla.
  2.  In a large nonstick skillet, heat 2 teaspoons oil over medium. Working in batches, drop cottage cheese mixture by 1/4 cupfuls into pan (2 or 3 at a time).
  3.  Cook until bottoms are set and tops have small bubbles, about 1 minute. Turn pancakes and cook until just firm in the center, 1 to 3 minutes more. Repeat, using remaining 3 teaspoons oil for the other batches.

Per serving: 213 calories; 7.8 grams fat; 10.8 grams protein; 24.2 grams carbohydrates; .6 grams fiber
