Just discovered this, but haven't tried it yet.  Its very low cal for 1/6th of a pie.  Who knows when/if I'll get around to making it so I wanted to post it before I forgot about it

CRISPY PEANUT BUTTERSCOTCH PIE
SERVING SIZE= 1/6 of Pie

  • 1/4 Cup Peanut Butter, reduced fat
  • 1 Tablespoon Honey
  • 1 1/2 Cups Rice Krispies
  • 1 Ounce Box Non Fat Butterscotch Pudding (however I assume you change the pie flavor by using whatever flavor pudding you like best)
  • 1 1/2 Cups Fat Free Whipped Topping, thawed      &nb sp;  
  • Ground Cinnamon
  • Rice Krispies
  1. Combine peanut butter and honey in a microwave safe bowl. Microwave for 30 seconds. Stir until it melts. Stir in rice krispies.
  2. Press mixture into an 8" pie pan.
  3. Prepare pudding according to the package directions. Fold in 1 cup of the whip topping.
  4. Pour over the piecrust.
  5. Cover and freeze until firm.
  6. Let stand at room temperature for 15 minutes. Spoon remaining whipped topping over the pie. Sprinkle with some cinnamon and a few rice krispies.

Of course you know I'm thinking "chocolate peanut butter pie!"
I just made it and it's setting in my freezer!!  I used hershey syrup in place of honey and used Devils Food flavored pudding.  I also used my PB2 instead of regular peanut butter.  The bowls tasted yummy, so I'm sure this will be GREAT!  Got it tagged!
wow, yours is going to be super low with the PB2 and chocolate syrup subs.  Did you do the nutritional breakdown?

Who wants to send me some PB2?  I can buy it from the website but costs $80 to ship to the UK.  :o(  Won't be trying it any time soon.

Has anyone made this yet?  I keep checking back to see how it turned out.  I really want to know if its as good as it sounds.
This was soooo good!  Even my picky family ate it.  I used cheesecake flavored pudding instead and I did not let it freeze.  Everyone should try this!
Why didn't you let it freeze?  Was the consistency like a regular pudding pie when you did it that way?  I think I might make this today.
I have tried this, and it's amazing! Only one problem...after an hour or two the rice krispie crust gets kind of soggy. I wonder what I could substitute that might stay a little crispier. Any ideas?
You could use something like All Bran or Fiber One. The nutritional facts will be a little different but you'll have more fiber and probably more crunchiness.
I was thinking of using Fiber One with some cinnamon added to it.  But I think it will still get kind of soggy...unless I eat it all before it gets a chance :)
it did not freeze because we wanted to eat it! lol
