I was recently diagnosed with CIC and was advised to bump up insoluble fiber intake. I've looked it up and Kale is one of the top 5 veg that offers high insoluble fiber/gram.

Other than Sauteed Kale and Kale Chips, do you have know any other kale recipe you'd like to share?

That looks yummy too... This is a quick fix since I keep potatoes all the time.

I make this about once every 2 or 3 months and love it! and so does my husband, which is why I don't wear it out. LOL ... enjoy ...

I've just been exploring kale recipes myself and my absolute favorite is also the easiest.  

AMAZING Raw Kale Salad.

one bunch kale

one lemon

2 to 3 cloves garlic 

pinch of kosher salt

destem and coarsley chop the kale. Squeeze a whole lemon over the top. mince garlic and throw it in. drizzle lightly with olive oil and throw a pinch of kosher salt in there. let it sit - the lemon and salt "cooks" the kale and garlic softening up even the coarsest of kale. if you let it sit at least an hour you will have a tender, bright tasting, healthy and delicious salad that is great accompanying any dish and great for a healthy BBQ dish or potluck platter. As it sits I occasionally like to toss the salad so that all leaves are well coated. Really tasty!

Blend it in my smoothies with protein powder, berries, almond milk and ice. Yummy!

I just had it tonight, lightly sautéed, and mixed with whole wheat pasta, then made a sauce of melted goat cheese ( can also use cream cheese) which makes a super creamy sauce but very lo cal. Sauce can also mix with a little marinara, but make sue to melt cheese off the heat. It's also great sautéed with salt and balsamic. We eat Lot of kale and my family loves it. Good luck!
