Kale recipes
I've got a large surplus of kale on hand at the moment and I want to try some cool recipes. What do you guys like to make with kale?
Here's my fave kale recipe du jour: Kale gomaae (based on the spinach salad sold in sushi restaurants)
- 1-2 tbsp toasted sesame seeds (traditionally ground with a mortar and pestle, but can also be ground in a coffee grinder or just used whole)
- 1 tbsp soy sauce
- 1/2 tsp sugar or honey
- 1/4 tsp sesame oil
Boil a small bunch of kale (enough to yield about 1/2 cup) until it softens but still has some bite to it. Shock it in cold water, drain, and slice into long ribbons. Stir dressing ingredients together in a small bowl, add kale, toss, and serve immediately.

I tried this and it was wonderful:
Wash and tear kale into "chip-sized" pieces. (get rid of stems)
Spread evenly on cookie sheet with Pam spray. Salt with sea salt and bake until a bit crunchy .
YUM and HEALTHY!
Ah yes, kale chips. I think that will probably be my study buddy for the next week - I love munching while I study! Has anyone tried other flavourings?
Kale is my new favorite veggie.
- Kale chips - yum. mix 1 cup fat-free Greek yogurt with 1 tsp lemon zest and 2 T lemon juice for a dip.
- Blanch kale in boiling water for 2 minutes, drain well. Saute in a little olive oil. Mix 1/4 cup tahini with 1/4 cup non-fat yogurt for a sauce. Sprinkle with pomegranate seeds, if in season.
- Clean and de-vein kale; chop. Mix with leftover mashed potatoes (or make some from a box), salt and pepper to taste, one egg. Batter should be thick. Fry in a little canola oil.
