Leftover Easter Eggs the Healthy Way
As a (mostly) vegetarian, I don't have to worry about cholesterol as much as some people. I have to admit I'm an egg fan.
I appreciated that this article is free of fatty mayo and glop like deviled eggs.
Thank you for sharing the link. I made mayo free deviled eggs with mine - just the yolks mashed with dijon mustard and some chopped pimento stuffed manzanilla olives. Everybody liked them.
Sounds good! Much better than my mother's mayonnaise-y deviled eggs. I don't know how it's possible, but one spoonful of my mom's potato salad has more mayonnaise than a spoonful of mayonnaise.
How do they do it?
I was once invited to lunch by a friend, who, knowing that I am "on a diet," said that we would be having salad. Yep. Chicken salad, macaroni salad, potato salad, etc. Sometimes you just have to laugh.
I do a mexicali style.
Sub the mayo for salsa and top with a little green onion and finely shredded cheddar. Yum!
