Low Calorie Pumpkin muffins

Quote  |  Reply

I got this recipe from a friend and tried it over the weekend. It's similar to diet soda cupcakes but with canned pumpkin instead:

1 box cake mix (recommend Betty Crocker Spice Cake or Yellow Cake)

1 15oz. can pure pumpkin (not pumpkin pie filling)

Mix ingredients together until well blended (mixture will be very thick). Spoon into muffin cups and back 350 degrees for 15-20 minutes. Use toothpick to test for doneness.

These muffins are sweet, like cupcakes, but with a heavier texture, like muffins. I made 18 muffins, but you could easily stretch it to make 24 smaller ones or 12 large ones. Also, mini-muffins would be good too, especially if you need to take a baked good for a brunch or other event.

How many calories would be in each muffin?

Well, according to the friend who got the recipe, it's only 1 weight watchers point, but I think it really depends on how big you make your muffins (i.e. how many you make) and what cake mix you use.  If you can squeeze 24 muffins out of it, they'd be about 90 calories (85 for the cake mix and 5-ish for the pumpkin).  It's easy to figure out if you look at the "as boxed" nutrition for the cake mix (not the "as prepared" because that includes the oil and eggs).  If you only make 18 muffins, then they'd be 120 calories each.
I love that recipe, but I add two eggs to it.  When I make it for parties it is always the first to go.  I make it in a bundt cake pan and sift some icing sugar over it very lightly.  Makes it look decadant.

Thanks!!! That sounds really great!Laughing

Are your nutritional stats for 18 or 24 muffins?

A day later, never mind ... I did the math! It's 24 ...

Allergy Remedies
Is It Possible to Go Natural?
The side effects of allergy medications keep some people from using them. Natural remedies can be a great alternative, but some are more effective than others.
