Low fat / Low Cal Carbonara or Alfredo Sauce
Again. I am driven to create substitutes for my favorite pasta dishes. I hope you enjoy this. We did!
Carbonara

Makes 2 Cups = 1/2 c per serving
1 cup chick stock
cal 5 sod 450 pro 1
1/2 c egg beaters
cal 60 sod 230 pro 12 sugar 2
1/2 skim milk
cal 45 fat .3 chol 2.5 carb 6 protein 4.3
2 TBS Fat Free Parmesan Cheese
cal 20 sod 65 carb 3 pro 1
3 TBS Fat Free Cream Cheese
cal 45 carb 5 sug 3 pro 6
3 pcs turkey bacon
cal 75 fat 3 chol 30 sodium 410 carb 3 pro 6
1 tsp parsley dry
1 tsp garlic powder
salt to taste
pepper to taste

In a sauce pan slowly melt the cream cheese and gradually add the skim mill and chicken stock. Do not boil.
Add the parmesan cheese, garlic powder and dried parsley. Drizzle in the egg beaters stirring constantly. Do NOT boil. Stir until smooth and the egg is cooked.
Add turkey bacon mix well. Serve over spaghetti squash or thinly sliced zuchini strips with roasted red pepper.
