How To Make Salads Interesting?

Hiya, Would love a few tips on how to make a nice salad! I've tried adding fruit as well as vegetables, just wondering if anyone has any other ideas? Thanks! X

some of the things I use are

-adding parsley and mint

-adding pomegranate molasses  to the dressing

-soaked bulgur

-grilled chicken pieces

-a sauce of yogurt, lemon and garlic

- a 20-calorie-worth sprinkle of grated Parmesan 

My favourite new way to eat salad: pouring a pan of braised veggies over a bed of greens with some crumbled cheese and chopped fresh herbs. So yummy and flavourful, you don't even need dressing! For extra yumminess, crack an egg into the pan of simmering vegetables, cover, and let it cook until the yolk just begins to set. Even better: sprinkle with toasted chopped walnuts or almonds. Best one-pot meal ever.

I'm currently chowing down on a big salad of leaf lettuce sprinkled with crumbled blue cheese and fresh chopped parsley and topped with leeks, shiitake mushrooms, morels and one egg simmered with mushroom broth and a little red wine. Huge, filling, decadent, and leaves plenty of cals for dessert!

i add shirataki noodles, japanese yellow daikon radish (the pickled yellow radish in sushi) and kimchi to most of my salads! the kimchi makes the salad taste super good with thousand island dressing (walden farms calorie free of course!) and the shirataki noodles add the extra chewyness, whilst the radish offers a sweetness and super crunch!

Making my own salad dressings and finding the right "lettuce" was the key for me. I like spring mix best.

For store bought dressings try Bolthouse if you can find it. I LOVE blue cheese and they make a yogurt blue cheese that is delicious and 35 calories for 2 tbsp. They have similar low calorie Caesar, 1000 Island, and Ranch.

Tzatziki, salsa, sour cream, and hummus thinned with water are yummy non-traditional toppings.

I usually choose two 1/2 portions of "high calorie" toppings (nuts, cheese, olives, egg, or non-lean meat) and then add to it.

If I'm using sunflower seeds and feta I'll add fresh strawberries or pears or grapes or apple, cucumber, a bit of dried cherries, and an orange-balsamic vinaigrette.

If I've got pepperoni and mozzarella I'll add chickpeas or chicken, cucumber, carrots, tomato, and either blue cheese or simple red wine oregano vinaigrette.

I LOVE tangy greek salad with feta, kalamata olives, cucumber, pepperoncinis, tomatoes, onions and lemon-mint vinaigrette.

Find things you love. And then add a ton of veggies. You won't get bored.

Salad of Shaved Fennel, Oranges, and Plain Pecans (recipe calls for Candied) 

Salad

  • 3 tbs. olive oil
  • 2 Tbs. white wine vinegar
  • 2 medium fennel bulbs, halved and thinly sliced (2 ½ cups)
  • 2 cups baby arugula leaves
  • 3 small Valencia oranges, peeled and thinly sliced
  • 1 small red onion, halved and thinly sliced (¾ cup)

 

My favorite is A romaine heart Some red onion 15 red grapes quartered A sprinkling of low fat feta cheese

Dressing One lemon well squeezed One Tbsp of olive oil Half a packet of stevia Black pepper

Shake the dressing all together and toss, fresh summer salad!!

Just keep mixing it up.

I always start with a base of iceburg or butter lettuce, then add baby greens - spinach, arugula, or spring mix

any vegetables. I most often use any of the following: carrots, cucumbers, broccoli, onion, asparagus, avocado.

or fruit: tomatoes, apples, strawberries, peaches, blueberries, cranberries.

nuts: walnuts, pecans, almonds. Whatever I have on hand.

cheese: bleu, cheddar, feta, goat.

protein: tuna, salmon, chicken, egg, soy crumbles.

dressings: I just use balsamic vinegar and lemon. Other times salsa, depending on the salad.

Use your best judgment and experiment to find the right flavours.

You can always make themed salads like Mexican - add beans, ground beef or soy crumbles, salsa, cheese, etc., whatever you like. Greek - tomatoes, olives, feta. BLT - just like the sandwich but with more veggies, minus the bread; maybe toss with a little mayo or dijonaisse. Pizza- pepperoni, cheese, green pepper, mushrooms, black olives, etc. Basically just taking foods you like and turning it into a salad, going easy on the more high calorie ingredients, of course.

Then there are always salads without lettuce like Caprese or a salad of just cucumbers, tomatoes, and basil (no lettuce) is delicious and refreshing.

Asian - I like to make an asian slaw that is julienned carrots, cabbage, red onions sliced very thin, crushed peanuts, then toss with soy sauce, ginger, red pepper, a little honey. Something different and SO flavorful.

My standby simple salad is baby spinach leaves with strawberries and whatever nuts I have around. It goes perfect with balsamic vinegar.

Other favourite combinations: lettuce, greens, tomato, onion, tuna, lemon juice. lettuce, greens, chicken, apple, goat cheese, walnuts.

I really want to try a salad with buffalo chicken, celery and a little bleu cheese dressing but I'm not sure. It might be too heavy. Maybe for dinner or a late lunch.

These are my fave salads:Tongue out

1. Spinach with boiled eggs, bacon and red onion & vinegraitte

2. Spinach with goat cheese, pecans, mandarin oranges, red onion & balsalmic dressing

3. Asian ginger dressing on mixed greens with pea pods, bean sprouts, scallions, water chestnuts and sliced chicken breast

4. "Tunutty" salad with tuna, yogurt, chop walnut, apples, celery, onion, pinch of curry or tumeric...good in a rollup

5. Romaine, vidalia, croutons, parmesan and homemade lemon vinegraitte

6. Anti-pasto salad of buttercrunchand or escarole or endive topped with tuna in oil, shrimp, cappicola, provolone chunks, radish roses, pickled mushrooms and artichoke hearts, motzarella balls, grape tomatoes, cukes and bread sticks on side, top it with oil & red wine vinegar.

My new favorite salad has spinach, romaine, cucumber, onion, strawberries, chopped nuts (walnuts, pistachios, etc) goats cheese and fat free poppyseed dressing! Seems a little weird but trust me the flavors are so good! Any fruit on salads really is very delicious!
I was just watching The Chew and they made,what looked like, an amazing salad...ingredients were Watermelon Feta cheese Mint Olive oil And maybe a few other items. I am going to look it up!

But I swear I could almost tase it through the screen. It looked amazingly yummy for summer!!

I've made this one before. It was ok but make sure you eat it right away or else it gets pretty watery. Best if served very cold!

Arugula adds flavor too

Ladies, you HAVE to try this.  It really does work.  The site is called Salad in a Jar.  Wow.  It requires a vacuum food sealer with a hose attachment.  My lettuce would only last 3 days usually before it started to go limp.  Using cut up Romaine lettuce, stuffed into mason jars and vacuum sealed... they now stay super fresh for days in the fridge.  And she also has a super simple site on homemade yogurt that is fantastic.  Enjoy.

Add walnuts to top off your fav salad! Healthy and yummy!
Terrific salad dressing: 1 T Dijon mustard 3 T white balsamic vinegar 1T lemon Mix well and whisk 1/2 cup walnut oil Add 1/4 t each pepper and salt. Shake several minutes and it will stay suspended. Best fresh on a romaine, apple and toasted walnut salad. Don't substitute olive for walnut oil-- that makes all the difference in taste. Keeps at room temp for 4-5 days if you haven't used it up before then.
Chicken strawberry salad

Grilled chicken breasts sliced thin Mandarin oranges Sliced strawberries Sliced pineapple Blueberries Walnuts Bagged lettuce (I like butter lettuce) Raspberry merlot salad dressing--low calorie 30 cals/2tbsp

I add chick peas hearts of palm artichoke hearts and corn nuggets. Mix together in a bowl and put one cup with any lettuce mixture.
