Why do my muffins always sink in the middle?

Quote  |  Reply

Ok well it doesn't happen every time but I made muffins today and they sunk in! My cupcakes and cakes always come out perfect. Muffins = sunken giggly mess

Why?!

Here's the recipe:

1 and a half large Bananas 1/4 cup Honey 3 tbsp Vanilla Greek yogurt 3 tbsp Un Sweetened Apple Sauce 2 large Egg White 1 tsp Pure Vanilla Extract 2 tbsp Whole Wheat Flour 3/4 cup Oats 1/2 tsp All Purpose Baking Soda 1/2 tsp Salt 1/2 tsp Cinnamon, Ground 4 tbsp dark chocolate nestle chocolate chips

It said bake for 15-18 minutes 350 and they came out jiggly and sunken in and just gross looking!

I don't really bake, but I have found that if you add a tablespoon of apple cider vinegar or lemon juice to your recipe (add more for a bigger recipe) it really helps to POOF up the batter because the acid reacts with the baking soda.

Try that next time and see if it helps. It sure works for my protein bars and pancakes-- they end up more "cake-like"

Cool

You should watch some Gordon Ramsay cooking shows like Master Chef.

Couple of suggestions:

Get an oven thermometer (the ones that hang inside your oven) to ensure proper temperature. Your oven temp. is likely under the required 350 degrees.

Bake longer if necessary. If they are still "jiggly" in the center, they are simply not ready to come out. Baking time should also be adjusted based on altitude, so consider that as well.

Good luck!

ETA: Do not add vinegar or anything else that is not suggested in the original recipe, at least until you've mastered the original recipe.

I found out why. Ugh. The person I got it from photoshopped a fake picture of the muffins on the recipe so I thought it would look like that. Obviously I needed more flour but I was worried because the recipe didn't say to so.. I watch A LOT of cooking shows. I love cooking shows and watch them all the time and am an awesome baker..recipes from tumblr aren't very good though.

According to this article these are the possible causes of muffins sinking:
- Oven temp too low
- Batter was mixed excessively
- not enough liquid
-not enough baking powder

It wasn't enough flour and they were gooey even though I put them in a long time. This recipe sucks big time

If you want a good muffin recipe that taste really good and comes out relatively low calorie + a healthier alternative to say...dunkin donut's muffins.

heres a chocolate chip one :  http://www.skinnytaste.com/2011/08/chocolate- chocolate-chip-banana-muffins.html ( super yummy, trust me! but contains white unbleached flour.)

blueberry muffin : http://www.skinnytaste.com/2012/03/insanely-g ood-blueberry-oatmeal-muffins.html ( uses white whole wheat flour, very good.) http://www.skinnytaste.com/2011/04/whole-whea t-blueberry-muffins.html ( uses whole wheat, also good)

mixed berry: http://www.skinnytaste.com/2011/08/mixed-berr y-whole-wheat-muffins.html ( uses whole wheat, haven't tried. looks good though!)

she also offers two other muffin recipes like peanut butter and something one and papaya coconut? i think. there may be others but i'm not sure. not all her recipes are great, but the first three are VERY good and yummy! I never had any trouble with them. I know you didn't ask for other recipes but i thought i'd try to help find a better healthier alternative. :)

Don't open the oven door while baking. If you must, only do so close to the very end of the baking cycle. Use your oven window and light (if you have one) until they are about done. Are you at high altitude? I live at 8500 ft and I do not have an oven window. If I open the oven door early-flop goes the muffins! All baked goods for that matter.

nope i bake a lot(even though cant eat it:/) and not adding enough flour would take away the spongey texture aka make it goopy

You aren't cooking them for long enough. They are falling in the center because then center is still goopy. Try putting in a tooth pick to confirm the muffins are cooked. You may only be taking them out 2-3 minute early.

If I would have cooked them longer they would have been burnt to a crisp. THE RECIPE SUCKED AND DIDN'T HAVE ENOUGH FLOUR IN IT.

Best Muffins EVER! Add the chocolate chips, and instead of topping the muffins, I mix in with chips. Enjoy!
