Overnight Oats - carrot cake?!
Helloooooo. Ok, so I know there are tonnes of topics on oats, but I have searched this forum and can't get the answer I want. Basically I would like recipes for overnight oats to have cold in the morning. With no need to add anything in the morning. So, do any of you have recipies for this? What are your faves? UK measurements please!
So far I have been doing 50g oats, 100ml milk, 100g yoghurt, almonds +seeds with rasins and chopped dried apricots with a flavouring.
Any more creative/adventurous ideas out there?
I am thinking 'carrot cake' but not sure what to put it so it is not bland - walnuts and grated carrot but anything else to consider? Change the ratio of oats to liquid?

I had to dig WAY back into my journal for this one! Here's a version that I used to make:
Carrot Cake Overnight Oats
- 1/2 c rolled oats
- 1 scoop vanilla protein powder *
- 1/2 tsp cinnamon
- 1/4 tsp ginger
- 1/8 tsp allspice
- 1/8 tsp cardamom
- 1/2 tsp orange zest
- 1/2 oz walnuts (~2 tbsp)
- 1 tbsp raisins
- 1/3 to 1/2 c shredded carrot
- 1/3 c plain kefir **
- 1/3 c unsweetened vanilla almond milk
- pinch of salt.
* can omit but you might use less liquid, add some vanilla extract and maybe some sweetener of choice.
** can replace with 1/3 c plain yogurt, water or milk. I used kefir for the healthy bacteria.
I would combine all the ingredients and let it sit in the fridge overnight, then heat it up slightly in the morning. You could also cook the oats (using the milks and raisins so they plump up) and then add in all the other things.
I am an overnight oats fanatic.
Lots of recipe's on my blog (see profile), but my current fave is strawberry cheesecake.
Sorry not good with UK measurements but but basically equal parts vanilla yogurt, almond milk, oats and cottage cheese is the base. Then I throw in chia seeds, cinnamon, nutmeg and ginger. Dash of salt and packet of sweetener. I put a handful of diced strawberries on top and let that all soak overnight.
In the AM I add ground flax (tastes like the graham crust to me), some vanilla protein powder and some chocolate chips!
I am in love with that recipe!
I replace the fruit and mix it up banana, blueberries, raspberries or several different kinds at once.

1/2 cup oatmeal
1/3 cup grated carrots
1 tbsp peanut butter
1-2 tsp honey or brown sugar
dash or more of cinnamon/ pumpkin pie spice
1/4 cup crushed walnuts
1/2 cup or more of vanilla almond milk
