Potluck Suggestions?
Hi everyone! We're going to a potluck cookout next weekend, and I wanted to get some ideas about what to bring.
We'll likely bring veggie burgers for the grill, but what might be good to bring to share?? I'm tired of being the "coleslaw" provider . . . :D
Any and all ideas are welcome, but I'd prefer vegetarian (eggs and milk are fine) suggestions!

How about a fruit salad so you can have dessert and not feel deprived??? My motives are always self-serving :) LOL

I, personally, love potato salad. With fat free mayo, it's not bad.
Veggie kabobs are always a hit.
For our last potluck, I grilled a big platter of veggies ahead of time, laid them out all nicely, and drizzled a lemony basil vinagrette on them once we got there. People gobbled it up and were grateful for the veggies (and the host appreciated that it went with the bbq but didn't take the grill -- grilled veggies are good at any temp!)
I took this recipe for Roasted Corn and Black Bean Salad to a pot luck earlier this summer and people I didn't even know were tracking me down for the recipe:
At the request of a few people, here is the recipe that I am taking to a pot luck tomorrow:
1 lb. pkg. frozen corn, thawed
4 T. oil
1 t. salt
¾ t. cumin
6 T. fresh lime juice
2 T. cider vinegar
1 C. chopped fresh cilantro
½ C. chopped red onion
3 plum tomatoes, chopped
2 jalapenos, seeded, chopped, opt.
1 red bell pepper, chopped
2 t. minced garlic
2 cans black beans, drained, rinsed
2 avocados, peeled, in ½? pieces
Heat oven to 450F. In medium bowl, combine corn and 1-1/2 T oil; toss to coat. Spread in an ungreased 10x15 baking pan. Bake 18-22 mins. or until corn begins to turn light golden brown. Stir every 5 mins. Cool 10 mins. In a small jar with a tight fitting lid, combine salt, cumin, limejuice, 2-1/2 T. oil and cider vinegar. Shake until well blended. In a large bowl, combine cilantro, onion, tomatoes, chilies, bell pepper, garlic, beans and roasted corn; mix well. Add dressing and mix to combine. Refrigerate until serving time. Add avocado just before serving. Serve with tortilla chip if desired. This salad gets better after a day or so.
And my family asks me to make this quite often. It's very healthy!
