Salad du Jour - very simple, very low calorie

Cole Slaw with Caraway Dressing
4 servings

8 oz shredded or chopped red cabbage
1/4 cup apple cider vinegar
1 tablespoon sweetener of your choice (brown sugar is nice)
1/2 tsp caraway seeds

Dissolve the sugar (or sweetener) in the vinegar and pour over the cabbage with the caraway seeds.  Toss well and serve. 

The calories will depend on which sweetener you use.  I generally use plain white granulated sugar because 1/4 of a tablespoon of sugar is not too much for me - it's less than a teaspoon.
