Veg Sloppy Joe Recipe withOUT tofu/fake meat/...?

Anyone have any truly vegetarian (i.e. just vegetables and spices, no fake meat substitute) sloppy joe recipes?

i would use mushrooms for the meaty texture and just make a thick bolognese.

you don't need a recipe for that, do you?

That is one way to do it, but I believe there are many other ways that I hadn't thought of and that might be interesting to try.  You know, other spices or veg combinations.

I'm asking for ideas.  That's not so bad, is it?

I don't have an actual recipe, but over the summer I had this delicious veggie sloppy joe, with the joe sauce, and cauliflower was in there, and I think squash. I'm sure beans would taste great in it too, and give you some protein. But sorry, I don't have the recipe. I think I would just look up the sauce recipe and then those are some ideas for veggies that tasted good in a sloppy joe.

I do typically put tempeh in, not tofu (and never that fake soy crumbles cr*p) but you could just use mushrooms, or any other vegetable you like chopped fine.  I agree, I'd use some other source of protein like some sort of beans if you don't like tempeh/tofu.

i think minced carrots and/ or beans would go well in meganr's recipe if you wanted to eliminate the tempeh.

This recipe from my favorite vegan cookbook uses lentils.

I second the use of lentils as a good textural replacement for something that traditionally contains ground/crumbled meat.  I can post a recipe from a cookbook that I have bookmarked but have not yet tried and therefore can't yet vouch for, if you'd like.

I was also going to suggest the snobby joes lentil recipe...I have not tried it but other CC'ers here love it.

I have had one with bulgur and mushrooms.  Also have done it with cooked barley. You can use canned sauce (if you are in a rush) but I usually do the ketchup, brown sugar, bell pepper, onion, worcestershire sauce combo.  I know there's a little anchovy in the Worcestershire, but the substitutes don't quite do it for me.

Maybe eggplant. I love using eggplant as a meat subsitute.

I haven't tried it for sloppy joes, but it works well in chili.

I added black beans to regular sloppy joes the other day, and they are a wonderful addition.  After trying that, I'm thinking of adding diced celery and green peppers, maybe lightly sauteed first.  These things might be really good (a little chili-like, perhaps) in addition to all the fantastic suggestions people have already provided--wow!  What great ideas!

Find a recipe that uses "textured soy protein". When I was vegetarian, vegetables and beans didn't provide enough protein so I used a recipe with TSP in it. It can be used in chili and stuff like that as well. Trust me it sounds nasty but you don't even notice it's there :)
