Great Vegetarian Stew
Just made this great stew and wanted to share the recipe. Variations to the posted recipe:
I roasted the cubed squash first and added it with the beans at the end.
Added one chopped red bell pepper to the onion saute and kernels from two ears of corn with the green beans.
I did the anaysis on my variations and called it Squash and Black Bean Stew II.
It was very yummy and filling and has a great nutrition grade.

One serving is about 2 1/2 to 3 cups. I know what you mean about the serving sizes. One cup doesn't do it for me. So I think you'll have enough for lumberjack dad!
I had leftovers tonight and measured the portion I thought looked like 2 1/2 to 3 cups--it's closer to 1 3/4 cup. Sorry. Still better than a cup though.
OK, I'm feeling a bit like a big dummy, but where is the recipe? I see Squash and Black Bean Stew I, but not II. Help!
