So my sexy DJ man and I are doing very well at keeping it healthy, but I need some ideas for lunch. I've been doing zucchini, red orange and yellow peppers, onions, tomatoes, carrots, and spinach in a low carb wrap with just a smidge of cream cheese to hold it all together and provide a bit of fat to help with the veggie consumption. It's super yummy but after a week of them, I'm a little burned out.

Can anyone suggest a good recipe for a wrap or sandwich or anything that it quick and easy and wouldn't require heating time? I've been scavenging allrecipes.com, but I figured I could ask my CC compadres too!

I like making one with lettuce, cheese, carrots (sliced thinly or shredded) and full pickles. Very tasty!
How about hummus instead of cream cheese and some tofu or tempeh?

Some I've eaten:

- Grated carrot, hummus, and whatever veggies you like. (Often I put tomato and either lettuce or spinach, onion)

- Tempeh bacon, lettuce + tomato

- Banana peanut butter

- Leftovers (a bit of leftover beans, leftover grilled veggies, steamed eggplant, mushrooms, etc)

- Tzatziki, cucumber, tomato + some veggie protein source (firm tofu, tempeh, fake meat, etc)

- Pizza wrap (cheese, tomato sauce, green pepper, onion, eggplant, mushroom)

Avocado makes a great addition, too

I'm gonna make me a quick balsamic hummus and veggie wrap (wrapped in collard). recipe: http://carrottopyodeller.blogspot.com/2012/06 /black-bean-balsamic-hummus.html

 

I'm probably gonna grate some carrots and zucchini with it. 

Oh!! And try this:

Tofu blended with: tahini (maybe 2 Tbsp per 1/2 lb tofu), lemon juice, carrot, ginger, salt

It's sooo good!!!!

 

 

I just remembered another good one!

Blend 1/2 C peanut butter with 1/2 C tahini, some olive oil (just a swirl), a swirl of sesame oil, some ginger, dash cayenne, garlic, lemon juice, and maple syrup, and some water if you want a thinner consistency. Adjust everything to taste.

Spread some of that on the wrap, and roll it up with brown rice and lettuce. Delicious!!!

Wrap. Hummus (hommus brand is fat free). Broccoli slaw. The end. Although raw red onions zap it up there too.

Oooooh! I agree with the above! Broccoli slaw is amazing in a wrap. Try zapping it in the microwave for about a minute and tossing it with Parmesan cheese and black beans and then stuffing it inside a whole wheat wrap or tortilla. super yummy and awesome!

Two of my favorites:

-Lettuce, chopped cucumber, chopped tomatoes, 1/4 avocado, salt, pepper, and Greek yogurt mixed with a little ranch seasoning for the spread

-peanut butter, jelly, & shredded carrots!

smear some Hoisan or plum sauce on a wrap and top with stir fried veggies

Try sweet potato hummus, chipotle hummus if u like spicy and loads of your fave veggies on a collard leaf as a wrap!

I make a southwestern mix that's perfect in a wrap:

1/2 cup diced tomato ( Roma works well)

1/2 cup diced celery

1/2 cup diced carrot

1/2 cup diced onion

1 cup corn

1 cup black beans

Mix all together, add 1/3 cup salsa ( or more)

Keeps well in the refrigerator

I really have been digging on gorgonzola cheese and horseradish mustard in my wraps, it give just the right kick of tangy and savory.  I definitely second the avocado addition as well.  Since it's all veggies you shouldn't feel guilty about adding cheese and avocado. You need the fat, as you said.  You can also blanch some asparagus (cut into 1-2" sections) and add that.  You can also make some brown rice with cumin and garlic and lemon and add a bit of that to the wrap to add some substance.  Also, marinated hearts of palm, pesto and feta are also super yummy. Good luck!

cottage cheese is very filling. i do with either cut up cantelope, blueberries & cukes or as a topper on last night's leftover salad.

Thank you to everyone who replied! I  appreciate all the wonderfully yummy ideas for lunches and I have a feeling I will have wraps down for a few weeks with all these fantastic ideas!

Next week, my guy and I agreed on southwestern wraps with smoked turkey in his and black beans and roasted corn in mine (recipe below). So excited!

4 La Tortilla Factory Low Card Wraps

4 ounces Jalapeno Cream Cheese, recipe follows

8 ounces Romaine lettuce, shredded

8 ounces tomatoes, seeded and diced

4 ounces red onions, diced

16 ounces smoked turkey, julienned (for carnivores)

8 ounces black beans and roasted corn, mixed

8 ounces avocado spread (such as guacamole)

Jalapeno Cream Cheese:

  • 1 1/2 jalapeno peppers, seeded and finely minced
  • 8 ounces cream cheese, softened
  • 2 1/2 teaspoons ground black pepper
  • 1/4 teaspoon salt

Directions

Lay tortilla out flat. Spread the cream cheese on the tortilla. Sprinkle lettuce, tomatoes, and onions in the center of the tortilla. Place the turkey all over. Top with avocado spread. Roll burrito style, making sure the ends are tucked in. Slice in half on the bias and serve.

Jalapeno Cream Cheese: Mix the jalapenoes into the cream cheese. Season with salt and pepper. Refrigerate until needed.

What about apple slaw- add dried cherries,walnuts, sunflower seeds, or what ever you like!
