my husband is vegetarian, and i want to make him a new years dinner... but i don't know what to substitue the traditional new year's pork and sauerkraut with something vegetarian... any suggestions?

I have made sauerkraut in a crock pot with just onions and green peppers sliced in it.  Very good.  You can also add a little sugar if you want - but I don't usually.

My husband loves it with just lots of onions. 

Also, about a 1/2 hour before it is done I like to add a can of canned potatoes.

When I was vegetarian, I used to make Not Dogs and sauerkraut on New Years.  I loved it!  Not Dogs don't take as long to cook either, so dinner was a snap.
Yeah, I would recommend the veggie dogs instead of pork.

Mmmm pork and sauerkraut...oh man I can't wait :-D
de-emphasize the meat part of the meal.  Those veggie hotdogs will add flavor to the sauerkraut and some potatoes will bulk it up, but make some other dishes, like scalloped apples and butternut squash.  Need recipes?
My fave german sauerkraut recipe:


I large bag/can sauerkraut

1 cup chopped onion

1 cup chopped apples

1 TBSP. caraway seeds

1 can beer or 1 cup white wine

1-2 cloves minced garlic

Bake in pyrex covered dish until onions are done.

This is usually cooked with a prok roast sitting smack in the middle of it, but it's good plain, too.

Maybe some fakin' sausages would go well with it? I like gimmer lean sausage - it tastes like meat so much that my hubby was fooled. (Yup! That cave man meat eater thought it was pork!)

When I was vegetarian I would sometimes have 'veggie bratwurst' I think Morningstar farms makes it--in packages in the freezer section. That would be a pretty good one-to-one swap.

Also, I'm with claire. Fill in the menu with some other vegetarian dishes. I usually have black-eyed peas on new years day (for good luck!). Search for 'Cowboy Caviar' on any recipe site for a good black-eyed pea salad.

Edit: oops, just realized the date. anyhoo, black-eyed peas are good anytime. lol.
we made regular sauerkraut and notwerst (sp?) were cooked with it so it gave it that picley flavour.. it was good.
