That definitely sounds interesting. It never occurred to me to incorporate tofu into a dessert...
Use the softest tofu you can find, and a bag of good quality chocolate chips, melt chips add tofu, blend with hand blender until smooth. Pour into graham cracker pie crust or individual serving bowls. Chill. Enjoy.

omg i make this all the time and everyone loves it. when i tell them its tofu they are like yea ok whatever... ;)
I've just discovered tofu and I love it. Can't wait to try this. I just made 20 calorie ranch dressing with tofu! It is my new best friend! LOL
Chocolate Peanut Butter Tofu Pudding
½ cup unrefined sugar (turbinado or sucanat)
1/4 cup unsweetened cocoa powder (I prefer Hersheyâ??s Special Dark)
pinch kosher salt
1/3 cup hot water
2-4 oz semisweet baking chocolate or chocolate chips (optional)
2-3 tbsp UNSWEETENED, all natural peanut butter
2-3 tbsp honey (or brown rice syrup)
1 16 oz package silken tofu, drained
½ tsp vanilla extract
½ cup unrefined sugar (turbinado or sucanat)
1/4 cup unsweetened cocoa powder (I prefer Hersheyâ??s Special Dark)
pinch kosher salt
1/3 cup hot water
2-4 oz semisweet baking chocolate or chocolate chips (optional)
2-3 tbsp UNSWEETENED, all natural peanut butter
2-3 tbsp honey (or brown rice syrup)
1 16 oz package silken tofu, drained
½ tsp vanilla extract
- In a small saucepan, mix the sugar, cocoa, salt, and hot water over medium high heat, stirring constantly until boiling. Reduce heat to a simmer and cook for two minutes, stirring constantly. Once the chocolate syrup has thickened, add the semisweet chocolate (if using) and stir until melted.
- Load the chocolate syrup, peanut butter, honey, tofu, and vanilla into a blender or food processor and whip until smooth and creamy, about one to two minutes. Taste for sweetness, adjust accordingly. The pudding can be eaten immediately, or chilled and enjoyed later (it gets thicker when chilled.)
