I just started a new job that makes me get up painfully early (4:30 a.m.) and do a lot of traveling. Boo.
I'd like some ideas for tasty vegetarian meals/snacks that don't need to be refrigerated or heated. Any ideas would be welcome! Here's an example of something I like to eat (but unfortunately am sick of already!):
1 cup shredded carrot
1 cup shredded apple
1 tbs honey
A handful of raisins
A handful of walnuts
A pinch of cinnamon
Combine all ingredients and toss into bag.
These are some of my favourite portable snacks/foods:
- A whole avocado (I just bring a small knife & spoon, cut it in half and eat it)
- Pancakes (made e.g. with oats, rye flower, mashed banana, cinnamon and nutmeg - no sugar needed). They're actually really nice eaten cold and will keep out of the fridge for quite some time.
- Carrot sticks and sugar snaps
- Homemade banana & carrot bread (no added sugar)
- Homemade carrot, zucchini & feta cheese muffins
- Raw nuts
- A banana
- Homemade energy bar (walnuts, pecans, almonds, dates, and coconut, blended in the food processor and made into bars)
When I was at uni I used to put a container of yoghurt in the freezer overnight, and then take it with me in the mornning and just let it defrost in my bag during the day. By lunchtime it would be ready to eat and still nice and cold.
Though I'd also recommend that you get a small lunch box/bag with an ice block. They're excellent, and will allow you to bring a filling salad (e.g. lentils, veggies, cheese, olive oil, seeds) or sandwich.

Hey, there isn't really a recipe as I don't tend to measure things very well when I bake (except things like baking powder/yeast) and have never written anything down for this bread. But I had a think about it and am pretty sure the following quantities would be about right:
Carrot and banana bread
200 ml dark rye flour
100 ml oats
2 tsp baking powder
very small pinch of salt
50 ml ground flaxseed
50 ml sunflower seeds
100 ml chopped nuts of your choice (I prefer walnuts for this particular bread)
100 g plain Greek yoghurt (minimum 10% fat)
50 g melted butter (this can be omitted and swapped for another 50 g yoghurt, but the texture will be nicer with butter)
1 large very ripe banana, mashed
About 3/4 cup finely grated carrot
1 tsp cinnamon (at least - to be honest I probably use more, I love cinnamon...)
Pinch of nutmeg
Melt butter and set aside. Mix all dry ingredients, including nuts and spices. Beat eggs. Pour eggs into flour mix, followed by melted butter and yoghurt. Add carrots and mashed banana and mix well. If you swap the butter for extra yoghurt the batter might get a little dry, in that case just add a little water or milk.
Pour batter into a bread tin lined with baking paper. Bake at around 180 degrees celsius, in lower part of oven. Can't recall exactly how long it takes, maybe 40 mins or so. But check it after 30 mins to be sure (could be longer than 40 mins too though, depending on your oven and the size of the bread tin). Bread is done when you stick a fork in it and it comes out clean.
While this bread has some sweetness from the banana, carrots and cinnamon, it isn't sweet like normal banana bread - i.e. it doesn't taste like cake. I made it for my mum once and she actually ate it with cheese and butter, like normal sandwich bread (though I did find that a little weird...).
Hope that recipe makes sense... I really should learn to write some of my recipes down!
Ya know, maybe it sounds silly, but I've found that when 'on the go', simplicity is easier than anything resembling a complex recipe. An apple or banana; maybe some cantaloupe in a cooler pack; or a baggie of granola, dried fruit... They all travel and keep pretty well.
my go to has been planter's peanuts/cashews in the 2 oz bags when I don't prepare my own. that's been helpful (except for all the salt).
I like Blue Diamon's 100 calorie packs of almonds. They're filling and yummy.
Banana's, oranges, apples and baby carrots themselves make great snacks.
You could also try making your own granola bars with peanut butter, oats, nuts and dried fruit etc.
Seaweed is a good snack. They make snack packs and sell them at stores like fresh and easy, whole foods, sprouts etc. I love seaweed and it's a good source of iodine which is important for vegetarians and vegans. The ones I buy are also labeled vegan, I've seen some nori at other grocery stores that are labeled: "may contain fish" so it's important to check.
Hummus is a great snack. You can buy it at the store or make your own very quickly (google recipes, there are a ton out there!)
It's very portable and you can bring chopped veggies for dipping and/or spread it on whole grain bread. I even spread it on unsalted rice cakes sometimes for a nice crunchy snack.
My favorite on the go thing are cucumber spears; I also pack nonfat greek yogurt and in a small little container a spice mix (chat masala, black pepper, celery seeds, nutritional yeast). I dump that into the yogurt and then use the spears to dip. I've been known to eat cucumbers whole, like apples.
The side effects of allergy medications keep some people from using them. Natural remedies can be a great alternative, but some are more effective than others.
