How do I know what I am eating is enough?
I am currently on a 3000k weight gain diet and I try to eat as close to it as possible and usually when I eat I don't count calories until the end of the day when I look through and kind of tally up the calories. I am getting up to 3k but I think that sometimes I eat way below because I don't really add up the calories but I want to eat freely without worrying about the numbers. What do you do to make sure you eat enough?
Anyone wanna share their meal plan?
I don't have a meal plan that I follow but should I? Would it make things easier, but my parents cook lunch/dinner so i have no control over that.
I wouldn't suggest a meal plan, but you could always track the calories in advance, like the night before. Just ask your parents what they are making for lunch and dinner and track it as well as what you plan on eating for breakfast.
Snacks!!! Here's what I do: 3 meals 3 snacks. Adding in 300-500 calorie snacks helps loads w/o making you eat your weight at each meal to get the cals in. I do:
Smoothies, toast&bagels w/ nut butter, yogurt parfait, sweets, cheese and crackers, veggies and ranch dip, granola, nuts and dried fruit, popcorn w/ cheese and dried fruit, leftovers...They really help!! Also liquid calories found in milk, juice, sports drinks, smoothies etc can help or soup-to-go. :)

Howdy! I'm in a similar position. I've found the easiest way to rack up calories without really "trying" is through Peanut Butter and various nut butters! A scoop here, a spoonful there. PB & Co makes several delicious varieties - I can attest to them all being fantastic.
If nut butters aren't your thing, try drinks. Boost and Ensure can provide the extra calories you need to get better, without the feeling of fullness that results from eating the equivalent in actual food.
