Why does my dieting self wanna bake??

I have two favorite good-for-you recipes, though only one involves actual baking.

The first is a great coffee cake that is pretty healthy and roughly 100 calories a slice.

You need:

1 package cake mix (any kind)
1 package pudding mix (any kind)
1/3 cup unsweetened applesauce (not chunky)
4 oz. egg substitute (like Egg Beaters)
8 oz. fat free sour cream

Mix this all together in a mixer. It's a pretty thick batter. Spoon half in a greased (I use Baker's Joy) bundt pan and add a filling. (As for the flavorings and fillings, I like to do things like a white cake mix, sugar-free lemon Jell-o pudding mix, and frozen blueberries dusted with flour in the middle, or a yellow cake, pumpkin pudding mix, and cinnamon, brown sugar and crushed graham crackers in the center, anything you want, really as long as your filling is not anything mushy or wet.) Top with the other half of the batter. Bake in a 350° oven for 1 hour or until a toothpick comes out without batter on it. Let cool for 15 minutes before removing from the pan. You can top with a little powdered sugar, add some fruit to the top, or just eat it as is.


The next one is a mock key lime pie.

You need:
2 tbsp. boiling water
1 package lime gelatin mix
1 container low-fat lime yogurt
1 tub of fat free whipped topping
1 graham cracker crust (you can make your own from reduced-fat graham crackers or vanilla wafers and a melted spread like Smart Balance)

In a mixer, add the water and gelatin mix and blend until dissolved. Add the yogurt and mix until combined. Add the whipped topping and mix until combined. Spread in the crust and refrigerate for at least two hours. (You can replace the key lime bits with any other flavor, but the lime is the tastiest, and if you make your crust out of something sugar free and make the other ingredients sugar free, too, it's a great sugar-free dessert.)

I don't know if this will help you, but I like to bake when I get the urge, and then just give the whole cake away to my parents or grandparents. If you bake a whole cake, you can't cut a bit out and then give it away, so it helps with your self-control! 

Otherwise, the other thing that I do is make some kind of fruit based muffin (like banana or apple) and just make a half-batch, so even if you do get the temptation to binge eat all of them, there is less for you to eat...

I have been baking like crazy. I never did it but I've been loving it since I've been dieting. I've baked 6xs in the past two weeks. In all that time I only ate one cupcake and 2 cookies within calorie limit. It feels good to resist. Idk but it seems that baking these delicious treats keeps me from wanting them. If I have a craving I often times find myself looking in a cookbook with lots of pictures and it goes away. This probably doesn't help but just wanted to let you know I'm a dieting baking fiend
