How does not eating beef and pork benefit your health?

No, human beings do not NEED to eat beef or pork.  Millions of humans either can not or choose not to eat beef/pork and are just fine for it.

Yes, you can absolutely lose weight by not eating beef and pork and by exercising.  You could also lose weight while continuing to eat pork and beef.

Simply replacing beef/pork with something else in your diet probably won't result in a weight loss, but if you replace it with lower calorie options it could be a good starting ground.

We need protein and iron from dark meats like pork and beef. Although you can still get it from supplements and vegtables. I was vegetarian, but I became ill from lack of protein. I was mainly concerned about horomones from the meat, so I just started buying organic.

I've never eaten pork or beef in my entire life (yes, ever, although I do partake in the occasional elk stake or antelope sirloin), and I am completely healthy.  There is no reason you need to consume it, as long as you get enough B vitamins and iron from other sources, which is certainly possible.  Cutting these out of your diet will not necesarily make you lose weight if you don't reduce your calories, but it can help you make healthier choices if you're finding you eat a lot of unhealthy forms of red meat like fast food hamburgers or bacon.

And yes, exercise is definitely recommended :)
