What's for dinner tonight?

I thought it would be great for people to share their healthy dinner plans. I don't know about you guys, but I could use some inspiration in the kitchen!

Tonight I'm making rice, mushroom, capsicum & herb-stuffed butternut pumpkin.

Healthy choice meal: tuscan chicken didnt feel like cooking

5 Jumbo Prawns grilled & Sugar Snap Peas and Quinoa seasoned with cilantro, chives, olive oil, lime.

Taco salad with lots of lettuce and 1/2 cup seasoned lean ground turkey meat per serving - add lots of tomatoes and veggies, some salsa and a touch of light sour cream, and voila! So good!

Mexican food... twice... lol.

Dinner #1 was at work.  I had a salad  fajita vegetables, black beans, corn, tomato salsa, and guac.  (I work at Chipotle.)

Dinner #2 was after I got home (after midnight, lol) and was some leftover fajita vegetables and an iceberg, guac (not as good as Chipotle), and tomato salad from a local joint.

I'm going to turn into an avocado one of these days...

EDIT:  Oops, sorry, I didn't see that this was in the Weight Loss board (I was just looking at the front page and saw this thread.)

I was planing baked potato with olive oil and black pepper with broccoli sprouts.. But after working out with my friends I settle for only blueberry greek yogurt with blackberries and grapes.

Butter lettuce and Romaine salad with 4oz sliced tri tip and grilled red onion on it and low cal low fat raspberry vinegrette (spelling on that one?) dressing, fresh watermelon, pineapple and strawberries and 1 small piece of french bread with a small drop of butter on it...sounds so yummy!!

Chickpeas with pasta sauce and cheese. Tastes just like a bowl of pasta, except with loads more protein! :)

I'm making the filling for these:

but putting it into shell pasta for southwest style stuffed shells!

Huge salad made with mixed greens (arugala, baby spinach), cilantro, tomato, cucumber and carrots, topped with oil and vinegar.

And a baked sweet potato with lite butter and plain greek yogurt!

Yum!

I made healthy philly cheese steak sloppy joes with ground turkey and they were delicious!!

You all have great ideas :)

Tonight I'm just having my usual: Crumbed Hoki fish and boiled veggies, plus maybe a boiled egg.

A tortilla with a cup of lettuce two hard boiled eggs and a tablespoon of sour cream. It was so yummy and bland enough not to aggravate my reflux. Seriously try it guys!

last night I had 50 oz of toss salad, a whole honeydew melon, 6 oz of chicken breast, a cup of cooked brown rice and 4 lbs of stir-fry veggies and I was still hungry.

Had a tofu and mushroom stirfry last night - it was delish. Dinner tonight: peas & corn, mashed potato and a boiled egg a nice simple sunday meal which the boyfriend is cooking :)

In the weekend I had some delish homemade pizza with lots of mushrooms, olives, feta, capsicum...
