French Onion Soup - Low Calorie Recipe

Makes 10 servings


All the taste of onion soup, satisfying but very low calorie

Ingredients
1 kg onions - sliced
2 l chicken stock
2 cloves garlic minced
15 g olive oil
1 salt & pepper
1 tablespoon worcester sauce
Directions
  1. Slice onions and mince garlic

  2. Season with salt and pepper

  3. Heat olive oil (non-virgin) in thick bottomed pan

  4. Add onions and garlic and fry fast until coloured

  5. Turn heat down and and continue to sweat for ten minutes

  6. Meanwhile bring chicken stock to boil

  7. Raise heat on onions again and when very hot some of add chicken stock to deglaze pan

  8. Continue to add remainder of stock and bring to slow boil

  9. Simmer for 15 minutes, adding Worcester sauce to taste

  10. Serve as accompaniement to another low calorie snack, eg Ryvita and cottage cheese to turn it into a satisfying meal.
