I bought frozen salmon fillets from Wegman's about a week ago and I don't know the best way to use them. Does anyone have any suggestions or good marinades to use?
I use a frozen wild salmon fillet and usually put it on my G.Foreman Grill for about 8 min. It's nice and tender. You can add spices to your taste. Salmon is too delicate for marinade - at least for any length of time. I have marinaded for a few minutes (15) in orange juice. Cooled, it can be added to your salad - yummy.
I like to steam mine or pan fry with lemon pepper. If you have a good non-stick pan, then you don't need to add any oil, as the oil in the salmon helps it to cook ![]()
Try a dijon mustard coating. All I do is coat the top of each fillet with about a teaspoon of dijon mustard, nothing else, and bake them. If you want a brown crust, mix the mustard with some honey. Sometimes I wrap them in foil and bake them for a more moist result.
I also put mine on the George Foreman Grill with a squeeze of Lemon Juice and I add salmon seasoning. I think it is like a seasoning for grilling. Real good and moist. Nothing special but boy is it good. My son and I do it every week.
Since they won't taste as delicious as "fresh" salmon that you would get at your fish counter, I would recommend you poach the fish in a nice broth - Trust me on this one, I am from a small town where we never get fresh seafood so we always have to revert to the freezer section for our wild salmon - And when we simply just grill those pieces, they hard taste as good as the FRESH type... but when we poach them in a nice Boulliabaise type broth... mm mm good! ha ha!
