Didn't have SmartBran cereal by Nature's Path in database yet, so put bran buds in recipe but USE 1 1/4 c SmartBran cereal instead of Bran Buds. May use other dried fruit instead of blueberries. Try 1/3 c water instead of maple syrup and 1/4 c soy flour to decrease sugar and increase protein content.

Recipe Ingredients for Fruit and Flax High Fiber Muffins

84 g All-Bran Bran Buds
1 3/4 c apple juice
5 T flaxmeal
1 c whole wheat pastry flour
1/2 c rye flour
1/2 c spelt flour
1 T baking powder
1/2 t baking soda
1 t cinnamon
1/8 t allspice
1/4 t sea salt
1/3 c canola oil
1/3 c maple syrup
1 t vanilla extract
1 c dried blueberries

Recipe Directions for Fruit and Flax High Fiber Muffins

  1. Preheat oven to 400 degrees.

  2. Spray or grease muffin tin.

  3. In a small bowl, mix SmartBran cereal and 1 c of the apple juice and set aside to soften for about 15 minutes.

  4. Combine flours, baking powder and soda, spices and salt in large bowl and mix well.

  5. In a medium bowl, beat flax meal with remaining 3/4 c apple juice for 1 minute. Blend in oil, maple syrup, and vanilla. Add SmartBran with unabsorbed juice and beat for 30 seconds. Mix in dried blueberries. Pour liquid into dry ingredients. Stir until just blended; do not over mix.

  6. Put batter into muffin tins, bake for 7 minutes and then rotate pan halfway. Decrease temperature to 375 degrees and cook until cake tester comes out clean, another 8-12 minutes longer.

  7. Cool for 10 minutes, then remove from tins and cool to room temperature on cooling rack. Eat within a few hours or may be frozen up to 4 months.
