Does anyone else have a hard time getting in the daily recomended amount of fruit?  or any suggestions on how to switch it up, instead of a regular old raw apple?

I used to, but then I just started experimenting. In the morning sometimes I'll toss some sliced banana on my cereal, or strawberries on my oats. Oranges are great for on the go--just peel and section them, then wrap in a damp paper towel and stick in a baggie so they don't dry out, or for a dessert I love to have a bowl of frozen berries and soymilk. Peanut butter and banana sandwiches, fruit salads that have neither melon or grapes. Whole manges, raspberries floating in soymilk and Bailey's...

I could go on and on. It depends on what you like. If you lean towards more 'desserty' stuff, buy some chocolate (If you're vegan, make sure it's vegan!) melt it and have a fondue night. Go to the market, try crazy fruits. It can be fun!

I've never really had a hard time getting enough fruit.  It's one of my favorite things.  I try to keep the variety up by eating mostly fruit that's in season. I only eat apples in the fall and winter, because that's when they show up at the farmers' market.  This time of year, it's all blueberries, strawberries, cherries and plums for me.  I'm really looking forward to blackberry season.

I get tons.  I eat fruit and nuts only for breakfast, so I have to eat a pretty big bowl to fill up.  Then I try to have fruit as part of my meal for at least one of my other meals, or afternoon snack.

Depends on what is in season, but my faves generally are melons of all kinds, berries (raspberries, strawberries, blueberries, blackberries), cherries, apples, peaches, pineapple, mangos, nectarines, and occasionally grapes.  I buy 4-5 different ones each Sunday then divvy them up in bowls to eat for breakfast during the week.  I also frequently make melon or mango salsas (some people call them relishes) that make great appetizers or side dishes.  The only fruit I have a problem with is citrus fruits.  I enjoy the juice but I can't get past the "pulpiness" of the fruit itself.  I can occasionally force myself to eat an orange, but although I like the taste, I don't enjoy the texture.  So I usually end up juicing citrus fruits, although it is better to eat whole fruits and not just the juice.

I definitely have no problems getting enough fruit. For breakfast I usually have a bowl of whole grain cereal with usually 2 types of berries and a banana on the side or a smoothie with two types of frozen fruit, a banana, spinach and soy milk. Then I tend to end lunch and dinner with a piece of fruit.

I also like baking a lot and I make pumpkin muffins (pumpkin's a fruit right? or is it a vegetable?...good for you none the less), or blueberry corn muffins. Also blueberry pancakes are great.

I often wonder if I'm eating too much fruit? I easily exceed my sugar intake everyday, usually 300% of what calorie count recommends. But I've also read that the fiber and pulp in fruit helps metabolize the sugar, unlike fruit juice or refined sugars which are rapidly released.  Plus whole fruits have all those antioxidants and vitamins. Anyone know anything about this?

I have never had a problem getting enough fruit. It helps to buy fresh and frozen fruit. With fresh fruit, I usually put it into baggies in the morning amd eat those on-the-go for breakfast. If they're tart a little bit of sugar, honey or sugar substitute left on them overnight creates a light syrup.

A favorite of mine is to take my favorite types of fruit, Vanilla Soymilk and Orange Juice (With some honey if the fruit is tart) and just blend it all together for a huge smoothie that lasts me all day. You can decide how creamy it is with how much soymilk, and using some frozen fruit and fresh fruit provides a chilled drink without using ice.

just experiment with different fruits to find what you like.

Trail mix with lots of dried fruit in it is a good snack.  Also, you could try making fruit salsas to use as condiments.

Apples are never a favourite of mine. I prefer melons (all kinds), red grapes, bananas, berries (all kinds), and oranges.

fruit salad is a great dessert this time of year. and you can always add fruit to your summer cocktails. on my blog i posted watermelon mint frojitos, for example...
