Ever buy something just because it is in  a recipe and that is the only time you eat it?

This post  is for suggestions on what else you can make with those veggies or fruits that you would limit yourself.

I will post my questions from time to time and I hope you will too.

Here are my two for today. The first one is jicama(it is pronounced hicama). I bought it and it had no flavor to it at all. I sliced it up with apples and baked it with cinnamon. It was about the size of an orange.

The second on is ginger root. I have added it to my tea and my stir fry.

i don't have any ideas for you, but i was wondering if anyone had any ideas for leftover canned-pumpkin?

Re canned pumpkin: add it to your oatmeal, put it in cake or muffin mixes, even pancake batter.  Maybe try putting some in a smoothie?

You know Jicama is traditionally eaten raw with chile, salt and lime juice - or raw in a salad with grapefruit. The mild crunchy taste grows on you, and it basically cries out for something sour like the lime or grapefruit.  

Canned pumpkin - try this with light cream cheese and dip apples in it. Delicious!

As for myself, I got plums in my weekly co-op share and turned them into plum upside down cake, made with whole wheat flour. It has made a great breakfast with veggie sausage links on the side.

Peel the ginger root and freeze it for later.  You would want to maybe slice it up or cut it into pieces suitable for later use.  Just peel it and put it in a baggie to freeze.  You can just grate it straight from the freezer without thawing.  Hope this helps :)

Jicama:  Delicious in tuna salad (no mayo) with carrots, celery, onion, tomato, and lime juice.

Ginger:  good on sandwiches if you can handle the spice.

i've got a recipe for an awesome jicama and bell pepper "slaw", no mayo just vinegar, oil and seasoning (i think)

ginger is one of the favorites in our house. i'll eat it with practically any veggie, saute up the minced ginger (and/or garlic) and add the veggie of the day!

jicama is actually used in chinese cooking too. it tastes sweet and crunchy in stirfries.

jicama - make a jicama/black bean/salsa salad... chop tomatoes, onions, green peppers, jicama and cilantro, add whole black beans, and season with salt, lime juice, cumin.... very refreshing and very easy on the carbs/fat.

ginger - ahh... gotta love ginger!! here are some ideas, add it to teas (cold or hot), make a carrot/ginger/orange soup, with the help of a juicer this same mix (carrots, orange juice and ginger) becomes a gerat juice for breakfast...

I didn't know until I spoke with my mother-in-law that you can break the ginger root into smaller pieces while at the grocery store. This way you only need to buy as much as you want. I haven't found a great way to store fresh ginger so I only break off a tiny piece...even it looks pathetic.

Pumpkin is something I have year round. I like to make baked pumpkin and add cinnamon. I have it instead of mashed potatoes.

OooooooooooH plums! I love them. I like to make a chutney out of them and add them to me chicken or pork. Great for sweet and sour dishes!

jicama is AMAZING with fresh lime juice and chile and a bit of salt. this was something in one of the dishes in the restaurant i worked at this summer, and i ate it like everyday. yum :)

Also, What do you do with  hearts of palm?

ginger-root can be added into herbal tea or even coke.

slice up a ginger-root into thin pieces. microwave a cup of coke for 30 seconds. put around 4 slices of ginger root and a few slices of lemon into the coke. stir and serve.

you'll be amazed how good it is.

canned pumpkin: I add to oatmeal but I've also found that it is good alone with a sprinkling of cinnamon (or pumpkin pie spice) and a little brown sugar. It tastes like a pumpkin pie without the crust. It's also good added to sugar free vanilla pudding.

i would like to have tons of yummy recipes for squash(spaghetti, and whatever the other ones are called)

any ideas??????????\

also wheat berries are delicious made like a salad with corn, green onions and a salsa type dressing, very nutritious

 wheat berries are literally the whole piece of wheat that comes off the plant.  not cracked, or ground, or anything.  you need to boil them for a really long time but they are really fun to eat, they are chewy and kinda pop in your mouth.  i used to eat at a place that made it into a salad (like rice salad) with yogurt, peanuts, carrots and green onions, and some other stuff.

hearts of palm are good to put in salad for a change of pace.

This is a vegetable that I starting eating when I started eating healthier.

I have made butternut chili,crust less squash pie,zucchini patties ,stuffed it with apples and dried tart cherries, and pumpkin soup.

Thanks for the info about the wheat berries. Our store is near an Air Force Base and we get customers from all over. A lot of times items are called by different names in different parts of the country.  

Today I want to know what do you do with radicchio. Have any suggestions or recipes of yours?

It's quite a bitter, peppery tasting leaf so it's best combined with other strong-tasting salads such as rocket and white chicory or endive.  Dress with something quite full-flavoured such as crumbled blue cheese and a mustard dressing.
