Banana Date Cookie
| 3 | bananas |
| 1 | cup dates, chopped |
| 1/3 | cup olive oil |
| 1/2 | tsp salt |
| 2 | cups rolled oats |
| 1 | tsp vanilla |
- Preheat oven to 350. Grease Cookie sheet. Mash banas. Add dates and oil; mix with a fork. Add remaining ingredients and let stand a few minutes for oats to absorb moisture. Drop by teaspoonful on cookie sheet. Bake 25 minutes or until nicely browned. Cool before removing from cookie sheet.
- Variation: Add cinnamon, nutmeg or allspice.
