Low GI rice salad, serve warm or cold
| 1 1/2 | oz brown basmati rice |
| 1/2 | onion, finely chopped |
| 1 | stalk celery, chopped |
| 2 | oz grapes |
| 2 | oz raisins |
| 2 | oz peas |
| 1 | tsp almonds |
| 1 | tsp olive oil |
| 1/4 | teaspoon ground cumin |
| 1/4 | teaspoon coriander |
| 1/4 | teaspoon turmeric |
| 1 | salt and pepper |
- Cook the onion and celery in the olive oil until softened and golden
- Add the spices and cook for a minute longer to release the aroma
- Cook the brown rice according to the instructions on the packet, (adding the peas at the last minute to defrost if frozen) drain and add to a mixing bowl with the onion/spice mix
- Halve the grapes and add to the same bowl with the raisins, almonds and seasoning
- Serve warm or cold with some salad leaves
