Hello. I have just met my weight gain and have put on about a stone. I basically went through a period of restriction and lost weight quickly. My doctor told me to gain it back and I have on a diet of 2500.

My question is, how do I maintain. Should I simply plug my new weight into CC counter and start with that? So if it says 1700...should I shoot for that? Will I still gain weight at this amount or will my metabolism have recovered yet? Thanks for the help.

First, make sure your BMI is over 20...  that's important.    If it is, then trim back your calories 100 a week (week 1 - 2400, week 2 - 2300 etc.)  until you're maintaining your weight.  You may gain one or two more lbs in the meantime but that's less dangerous than switching straight to a too low diet if you have a tendency to severely undereat.
