Recipe Ingredients for Gerson no-salt-added vegetable soup

4 cups chopped onion
1 cup chopped celery root
1 cup chopped parsley
2 large potatoes
6 cloves garlic
4 cups chopped tomatoes
2 leeks, chopped
3 quarts water

Recipe Directions for Gerson no-salt-added vegetable soup

USE ALL ORGANIC INGREDIENTS. peel and chop 2 large onions. use half of a large celery root, wash but do not peel and chop. use about half of a bunch of parsley. wash 2 large potatoes, chop skin and all. cut the tops and bottoms off garlic cloves, cut in half skin and all. chop tomatoes skin and all (in a pinch use 1 quart of tomato juice or canned tomatoes). slice the leeks, white part only. Put all into a large stock pot and cover with purified water. bring to a boil over HIGH heat. reduce heat to MEDIUM and cook for 2 hours. Run through a food mill and discard all fibers. store in quart jars, eating 1 quart a day until gone.
