Recipe Ingredients for GF Travel Bread
| 1/2 | c potatoes, mashed |
| 1/4 | c butter |
| 1/4 | c sugar |
| 6 | eggs, large |
| 2 | c brown rice flour + 2 T soy flour |
| 2 | t baking powder |
| 1 | t baking soda |
| 1 | t cream of tartar |
| 1/2 | t salt |
| 3/4 | c milk |
Recipe Directions for GF Travel Bread
- Separate eggs and beat whites until they hold a soft peak. Set aside
- Cook and mash potatoes to make 1/2 cup.
- Cream potatoes with butter and sugar.
- Add egg yolks and beat well.
- Mix dry ingredients and add alternately with the milk into the potato mixture.
- Fold egg whites into the mixture.
- Pour into 8x4" greased loaf pan or I used 6 crumpet rings and the ice cream scoop to make rolls.
- Bake loaf at 350 F for one hour or the rolls for 18 minutes.
