A gluten-free moist, yeast-free bread. Travels well.

Recipe Ingredients for GF Travel Bread

1/2 c potatoes, mashed
1/4 c butter
1/4 c sugar
6 eggs, large
2 c brown rice flour + 2 T soy flour
2 t baking powder
1 t baking soda
1 t cream of tartar
1/2 t salt
3/4 c milk

Recipe Directions for GF Travel Bread

  1. Separate eggs and beat whites until they hold a soft peak. Set aside

  2. Cook and mash potatoes to make 1/2 cup.

  3. Cream potatoes with butter and sugar.

  4. Add egg yolks and beat well.

  5. Mix dry ingredients and add alternately with the milk into the potato mixture.

  6. Fold egg whites into the mixture.

  7. Pour into 8x4" greased loaf pan or I used 6 crumpet rings and the ice cream scoop to make rolls.

  8. Bake loaf at 350 F for one hour or the rolls for 18 minutes.
