GIARDINIERA -- label says 0 calories per serving -- ANY RECIPE IDEAS?

I was doing my usual browsing and reading labels at the grocery store today and came across CENTO brand "GIARDINIERA". I had never tried/seen/heard of it before - but read the label and it says  0 calories per serving (1/4 cup). It is essentially a big jar of mixed veggies & peppers in a spicy vinegar.

I bought some and cracked it open & WOW ITS SPICY! Probably all the jalapeno peppers in it. hahaha.. I'm not a huge spicy person- so it's probably extra hot to my virgin palate.  I tried rinsing it off and eating it that way, and that was definitely less spicy, so was better. I can still feel  the heat in my throat/tongue/belly though. hahah

I have NO IDEA what else to do with it, other than eat it straight from the jar.

I suppose on pasta would be interesting - but any ideas would be appreciated?!

Anyone eat this stuff???

I should also mention i'm VEGAN. But if you have a recipe for a meat something-or-other with it, I can always veganize it.

Ohhhhh me and my boyfriend used to put marinated hot peppers (bell peppers actually, but REALLY spicy, bick I think) on top of our salad.  You don't have o put them in whole like me though (i'm crazy :p) you can dice them if you want, it really adds a kick to your salad and because of it's strong taste, you don't even need dressings or oils or anything.

ooh! good idea. I eat a ton of salad & I bet mixing it with lettuce and other things will decrease the spiciness a bit.

Giardiniera and its near relative muffaleta both taste good on cottage cheese.  Also good as relish in sandwiches - any Subway is improved with this.
