Will the ginger ale cake come out the same?

Quote  |  Reply

So now that I've started this new "healthier" lifestyle, I wanted to make a cake for my family that wasn't too bad for you (at least I think it's not). So I made a ginger ale cake. I used 2 egg whites, 10 ounces of ginger ale, and a box of 18 ounce dry white cake mix. The problem is, when I opened the cake mix, (I pulled it open with my hands instead of cutting the bag open...not very smart) powder went flying everywhere. I didn't know how much of the cake mix I lost. I still made the cake, though, and after it was done I topped it with fat-free Reddi whip and frozen grapes. Everyone in my family fought over it and it was gone within 5 minutes. So now that I know that it's good, I want to make it again in the near future but I want to keep the same flavor and texture, so besides pulling it open again with my hands, which I refuse to do (I spent 10 minutes trying to clean my black cat who turned white) should I just use the whole box of cake mix and hope it turns out the same? The cake was very soft and light, almost resembling angel food cake.

Use the whole box.  The result should be ok.  Cake mixes are filled with ingredients to stabilize the final product even if someone measures wrong.

Okay great. Oh, and would you happen to have any other better "icings" for the cake? The Reddi-wip was great and all, but it melts very quickly and it would be nice to have a better topping that would sit still on the cake and still be somewhat "healthy".

Dust it with powdered sugar.  Looks pretty and doesn't add many calories.  If you must have something creamy with it, try Cool Whip Free - very low in cals and pretty darn tasty.  Don't ice the cake with it though, just serve it on the side.

Thank you so much!!! I'll try that next time.

Umm, this sounds really good, and might be what I was looking for to keep me good when I need something sweet.  Sometimes it's hard to behave when everyone else around you gets to enjoy!

Trust me auburndawn, it's awesome. Although I would recommend using 3 egg whites instead of 2 and the grapes I used were actually semi-frozen red grapes. That way you'll be able to actually eat them.

I was actually under the impression that, with the "soda" cakes (personally I tried the Diet Coke cake), that was supposed to replace all liquids (eggs/oil/water).. I tried it a few times and it TASTED good, but the texture was still a little off from regular cake - it was VERY wet and heavy - not pleasantly moist - more soggy - sort of like it was undercooked, although it was in the oven for 20 minutes longer than it should have been and, by the knife test, it was cooked.

Oh really? The one I made actually seemed a little more dry than normal cake. Try using 2-3 egg whites. It really seems to make a difference.

I'll definitely give that a try.. thanks! The recipe I found on here said to replace ALL wet ingredients with 12oz Diet Coke. To be honest, I was expecting it to be GROSS.. but I have to say.. even the batter tasted damn good (haha whoa that makes me sound like a slob, eh?)

Ha ha. I actually tasted the batter before I put it in the oven. I was thinking "This can't be safe to eat with the raw egg in it" but I really wanted to see what it tasted like...so I tried some. lol

Mine had no egg.. and boy, let me tell you. I could have eaten the entire bowl without even cooking it.. but again, it was chocolate cake made with Diet Coke.. I don't know what ginger ale would do to flavoring of things..

The rule of thumb is to use ginger ale with white cakes. It probably wouldn't taste too good with chocolate cake. If you're going to make chocolate cake, then you should use diet coke again. The eggs will make a difference.
