I just found a recipe for coleslaw that calls for ginger juice.  I am trying to make this without going to the store.  I am thinking I will probably just leave it out but does has anyone used ginger juice in anything?  I can't recall ever even seeing it in a store, but maybe in a specialty store?

  • 1/2 pound snow peas, trimmed and strings discarded
  • 1 1/2 pounds Napa cabbage, cut into thin shreds (about 9 cups)
  • 2 medium carrots, shredded
  • 1 tablespoon ginger juice
  • 1 tablespoon rice vinegar
  • 3 tablespoons vegetable oil

In a large saucepan of boiling water blanch snow peas 15 seconds and transfer with a slotted spoon to a bowl of ice and cold water to stop cooking. Drain snow peas well and slice thin diagonally. In large bowl toss snow peas with remaining ingredients and salt and pepper to taste.

Should I use some other kind of juice? Or just omit it? Any opinions or ideas?

It's probably included for the spicy ginger flavor.  You could mix a quarter teaspoon of ground ginger to the vinegar instead, or just leave it out.  I've never used just the juice of the ginger root, but I try to keep one on hand to grate into different dishes. 

I would probably just add a half teaspoon or more of ginger and a bit of water or extra oil.

you can crush ginger in a garlic press. 

Thank you for the quick replies!  I will just  grate some fresh I think, with a splash of water maybe.

Ahh for future ref. Ginger Juice can be bought at health food stores I think. I know we can buy it here at the one in town because I but it once a month for TTOM. Helps tremendously! Never used it in recipes but I might give it a try instead of my ginger powder.
