Ginger Molasses Quinoa Cookies

Recipe Ingredients for Ginger Molasses Quinoa Cookies

1 1/2 cups whole wheat flour
3/4 cup dry quinoa
1 tsp baking soda
2 tsp ground ginger
1 tsp ground cinnamon
1 tsp ground nutmeg
1/2 tsp ground cloves
1/4 tsp salt
1/2 cup Vegan Buttery Sticks
1/2 cup brown sugar
1 egg
1/3 cup molasses

Recipe Directions for Ginger Molasses Quinoa Cookies

  1. Preheat the oven to 350? F. Lightly spray a cookie sheet with cooking spray.

  2. Grind the quinoa in a food processor until it becomes a fine powder ? depending on how powerful your blender is, this could take a few minutes. If there are still some little chunks of quinoa that's okay ? it'll add a delicious crunch!

  3. In a medium bowl, combine the quinoa powder, flour, ginger, baking soda, cinnamon, cloves and salt.

  4. In a large mixing bowl beat together the Earth Balance, brown sugar, egg, and molasses until smooth. Beat in as much of the flour mixture as you can with the mixer. Stir in the rest of the flour until a thick dough forms.

  5. Use your hands to roll dough into small balls, and place 12 on the cookie sheet. You can flatten them slightly with the palm of your hand.

  6. Bake for 10 minutes or until the bottoms are golden brown.

  7. Allow to sit for one minute before moving to a rack to cool. Roll out the rest of the dough and bake ? makes about 28 cookies.
