all right, i want to do some clam strips, anyone got a proven gluten free fish fry recipe??

i think cornmeal is gluten-free.  Maybe you can season the corn mean and use that?

I use this for fish, I'm sure it could be used for clam strips as well.

  • Oil for Frying (Use an oil designed for high heat frying: peanut or coconut oil work well)
  • 2 pounds fish fillets, preferably fresh
  • 1 cup Bob's Red Mill All Purpose Gluten Free Flour, OR your favorite GF all purpose mix
  • 1 cup cornstarch
  • 1 teaspoon GF baking powder
  • 1 teaspoon sugar
  • 1 teaspoon cayenne powder OR Old Bay Seasoning
  • 1 teaspoon GF garlic powder
  • 1 teaspoon GF onion powder
  • 1 teaspoon salt
  • 12 ounce bottle of Gluten Free Beer OR 12 ounces of club soda
Preparation:
  1. Combine cornstarch, GF all purpose flour, baking powder, Old Bay seasoning or cayenne pepper, sugar, garlic powder, onion powder, salt and pepper in a large, plastic zip lock bag.
  2. Shake the bag to thoroughly mix the dry ingredients. Pour this mixture into a medium sized bowl.
  3. Add beer or club soda and mix until the batter is smooth and not too thick or too thin. Add more liquid if the batter is too thick.
  4. Dip fish fillets in batter, making sure both sides are coated.
  5. Fry in hot oil until golden brown.

How long ago were you diagnosed?

I've only been at this since May, so sometimes I feel like I'm still a newbie too. Fortunately, I like cooking and baking so have been doing alot of experimenting.

Hi Sue,

I don't have celiac, just an intolerance.  This I found out maybe 2 or 3 weeks ago.  I feel soooooooo much better.  Since changing my diet I feel great and are considering not having my gallbladder taken out in December.

Anyway, I have been doing really good gluten-free eating, but i find I am eating alot of rice and carbs.  i have been staying away from the sweets ( i need to lose like 50 lbs).  Maybe we can chat about where you are getting tips and good "savory" recipes.  I seem to find alot for sweets.

Hi, this is my first time here.  I have been gluten free for 4 years or so.  At first it was very difficult and I have gained 25 pounds.  Rice is a very high glycemic index food as is most other gluten free food because of the flours used etc.  I gained 25 pounds since then.  I was already 25 pounds overweight, so now I need to lose 50. 

Anyway back to the fish.  I have a great recipe from Tyler's Ultimate on The Food Network for "Ultimate Fish and Chips" using rice flour and soda water.  It is the best I have ever tried, and he was trying to get the best British fish and chips.  I am from England and I can attest to the fact that this was good.  Obviously don't use the malt vinegar as suggested.  Good luck
