I have:
2oz sprouts
3 oz cucumber
4oz lettuce
5oz tomato
2 oz fat free feta or fat free cottage cheese
and lots of lemon juice, oil-free greek dressing (1/2 fl oz) and salt.
if they're lying around, I love to put in capers and gerkins too.

i recently discovered dried cranberries, but i've never thought of putting them into my salad.. think I'm gonna give it a try! I enjoy my salad for lunch with a slice of wholegrain bread and some more cottage cheese.
baby spinach, slivered almonds, strawberries and a tiny bit of creamy poppyseed dressing
and
iceberg + romain lettuce, tomato, cucumber, cubed chedder cheese, and orange slices. The orange slices make it nice and sweet so that it doesn't really need any dressing... so it is really low calorie as long as you don't go crazy with the cheese. I love it as a side dish when I make lasagna.
But recently I have been buying healthy choice santa fe chicken meals and putting that on top of my salad with salsa and a little ranch dressing. Its so good.
Chopped Green apple, walnuts, baby greens, crumbled gorgonzola, fresh blueberries, apple smoked turkey chunks, heirloom yellow tomatoes, finely diced red onion.
Huge squeeze lemon juice....bit of olive oil, fresh cracked pepper, yum.
Fabu dressing with virtually Zippo calories...
big scoop of salsa
big squeeze lemon juice, or vinegar
one teaspoon sour cream, or lite sour cream
or, leave out.
Amazing how good it tastes, and how one does not miss the fat..it flavors the salad really well.

salsa makes pretty much everything more delicious! i love it on pasta or rice
