Going Raw: 3 No-Cook Vegetable Recipes For Your Diet

Whether or not you follow a Raw Food Diet, you can’t deny the satisfying crunch of biting into a raw veggie. Roasted, sautéed, and boiled vegetables are delicious, but there are benefits to be gained from incorporating a raw veggie or two onto your plate.  Save some cooking time and explore new flavors with these recipes. You might not have even known you can eat them this way!

Raw Corn

If you think cooked corn is sweet, wait until you try it raw. Cut the kernels right off the cob and use them, or freeze them for later use. You can even use the husks for tamales to reduce waste. This side brings fiber, folate, a variety of vitamins and color to your plate.

Colorful Raw Corn Side

Ingredients

4 cups corn kernels (1 medium ear = 1 cup)
2 cups kidney beans
1 medium red onion, finely chopped
2 large grated carrots
¼ cup red wine vinegar
2 tbs olive oil
2 tbs chopped cilantro
salt and pepper to taste

Directions

  1. Combine corn, kidney beans, onion and carrots in a bowl.
  2. In a separate bowl, combine red wine vinegar, olive oil and cilantro. Stir well and add to first bowl.
  3. Season to taste.

Makes 6 servings

Raw Beets

Vibrant and overflowing with folate, manganese and potassium, beets are commonly roasted, pickled, or boiled into soups like borscht. Keep it simple by grating them into this sweet slaw, with raw broccoli as an added bonus! 

Beet and Broccoli Slaw
Adapted from Stellar Farmers Market Recipes

Ingredients

4 medium beets, peeled and grated
1 medium red onion, chopped
2 large heads broccoli, grated or sliced with a mandolin
2 tablespoons olive oil
3 tablespoons lemon juice
1 tablespoon ginger, minced
2 teaspoons Dijon mustard
¼ cup mix of chopped herbs (cilantro, parsley, dill, rosemary)
salt and pepper to taste

Directions

  1. In a bowl, mix together beets, onion and broccoli.
  2. In a separate bowl, make the dressing by combining olive oil, lemon juice, ginger, mustard and herbs.
  3. Combine dressing with vegetables and season to taste.

Makes 6 servings
