SATURDAY'S MENU -- BUBBLE AND SQUEAK

"BUBBLE & SQUEAK" is an old English dish, named for the sounds the ingredients make while cooking (or from the sound one's stomach makes after eating it)! Some sources say it was originally cold boiled beef and chopped cabbage, others claim it was originally mashed potatoes and cabbage, while some claim it originally contained all three. Today it is typically made from leftover potatoes and cabbage fried together. And, in my case, it uses yesterday's leftover ground turkey (with onions and peppers), plus some new potatoes and shredded cabbage -- and just a dash of worcestershire sauce -- all sauteed/fried together in the electric frying pan.

Lunch today was fresh green beans, a crisp n' crunchy apple, and a grilled chicken spinach salad with tomatoes and a hardboiled egg white, plenty of chili powder and some Walden Farms bacon-ranch dressing.... spicy and delightful! We also went to the regular grocery store and Trader Joe's and restocked a bit ... lots of fresh veggies, grilled chicken, dill pickles, turkey, and a HUGE supply of Progresso Light soups (just 120 calories a can!) As canned soups go, they are definitely my favorite, and are a great addition to winter-time snacks, lunches and dinners! (Plus they are all vegetable soups, so you get your veggies!)

two toasted Thomas' light multigrain english muffins (200 calories)

four tablespoons of roasted red pepper hummus (64 calories)

one slice of oven-roasted turkey (25 calories)

LUNCH

six ounces of organic baby spinach (39 calories)

two small organic tomatoes, diced (33 calories)

one hardboiled egg white, diced (17 calories)

8 ounces of garlic-dill fresh green beans (50 calories)

southwestern grilled chicken (200 calories)

one serving of ground turkey breast, seasoned (210 calories)

1/4 cup grilled yellow onions (17 calories)

three servings of sauteed shredded cabbage (60 calories)

It snowed at my house too, but since I also live in Ohio, that's no surprise.  Snow, ice, freezing rain....fun!  Tomorrows forcast is not a pretty picture.  Anyway, I just got home from the Christmas Party and I have to say I did very well with my food.  I ate half of a chicken breast, a very small portion of scalloped potatoes and a salad with about only a teaspoon of ranch dressing.  For dessert I had two miniature cups with cheesecake in them.  They were so tiny I don't they could add up to much at all, about the size of a miniature Reeses Cup.  So Hopefully my calories are still good tonight, but I am going to try to figure out how many calories I had.

I added the things up and still had enough room for my favorite....sweet potato with 1/2 tbls. fleishmanns olive oil spread and splenda on top, yummy!!  Calories for tonight 1,222.  I exercised this morning for 30 min. so if I figured the calories wrong for this evening my exercise should cover it.

Hi friends, not much time to post yesterday; even with the snow had to get working from early in the am until about 2:30. Drove from eastern Cincinnati down to Northern Kentucky to meet clients; took about 1 hour when is normally 20 minutes. I wore my snow boots with my grown-up lady clothes just in case. I did scroo up and leave my lights on though; fortunately my clients are wonderful and kind (and I have jumper cables), so helped me get going even in the freezing rain. Then another hour plus 5 minutes back home; whew, a bit stressful, but a big project now complete for my lovely 85 y-o client.

We were scheduled to see 4 houses yesterday, but postponed until the 29th given the conditions. So ended up over here at SO's place, with a fire in the grate, and ate a good supper (that I had planned calories for,) and drank tea, watched a movie and finished up my 100 holiday cards. We had invites to two holiday parties, but we're both off the sauce for the moment, and didn't feel up to the roads plus two buffets in one night... I can also be very home-body-ish despite being an over-the-top extrovert, I think it's a balance thing, so staying home was a good thing. (I also put the addresses in a spreadsheet, I figger it's good planning for when we send out the wedding invites later in 08.)

Planning 1800 calories for today, plus a nice big walk in the snow and cold down to the hardware store to pick up some paint and weather stripping.

Good work forks, 4SQ, beitty and molly (must be "cabbage in the air," ooh, that's not always good...)I find that thinking positive goes hand-in-hand with being aware of my breath, and my inner balance. If it's off, my positivity is affected. (eg when I'm frustrated, or afraid, or out of control, I tend to hold my breath). If you believe your soul and breath are one, then you can see the spiritual balance available to us all there. Just have to remember to let it roll, instead of struggle to control the positive. Sigh, seems so simple but sometimes is so hard.

I have a great quote about that idea, I'll try to post it later. Maybe the "struggle"/"peaceful" debate of weight loss success is the subject of another thread...

Woooo!  Good job everyone!  Molly, I'm envious you're running around in a tank top, I've got a tank top on, but it's hidden under a short sleeve shirt, a long sleeve shirt and a hooded wool sweater. :)  14 degrees here and snowing currently, so...alas, no run for me this morning and actually I only got 1 five mile run in this week, but...I did get in two days of step aerobics and also one day of shoveling for 90 minutes...and it looks like I'll be getting in another hour of shoveling or so today.  According to cc, I burn about 500 calories in that hour and a half...who knew?  I don't feel so guilty about only getting in one run.  I like the full body work out it gives me.  :)

Yesterday weigh in:  115

Calories kept at 1200, nothing new or interesting as far as food goes though, more of the same, lots of broccoli (I swear I could live off that stuff) and lots of cucumbers and green peppers (I swear I could live off that stuff too)!  I did have a high bread day (3 pieces total) yesterday, but my body was craving it and so I gave in.  Still stayed within my calorie intake, just...a lot of bread (comparatively..usually I have about two to three slices a week).  Oh...I had a pita this week too...hmmm, I need to see exactly what my body is missing that is making me crave all these grains.  Maybe I need to add in more cereal in the morning with my yogurt, I've been forgoing the cereal lately for "speed" reasons...no time for this!  Between work and the holidays it's been a busy busy month!

So, next week when I check in I'm hoping to be able to report a 1 pound loss and two days of running (weather permitting) on top of my 2-3 days of step aerobics.  This week I upped my step from 8" to 10"....holy moly.  My butt is...well, sore between that and shoveling!

4Square...how's your mom doing?  There are a lot of pages in this thread...I may have missed something and if so, I do apologize if I'm asking a repetitive question.

SUNDAY'S MENU -- SPICY SAUSAGE & PEPPERS

It was in the low 40s when we woke up this morning, and I stayed in bed (snuggling and cozy under a mountain of covers and a collection of cats) and planned my meals for the day. Of course, I have to do the "fine tuning" and "final tweaking" as I am sitting at my computer so I can look things up and log them as I go. I remembered that we purchased some yummy-looking Trader Joe's sundried tomato Chicken sausage the other day, a 5-pack, and that I could have two plump sausages for 220 calories -- leaving the other three for my wonderful DH. And I knew I couldn't have sausages without onions and peppers, and decided to pair it up with spicy Sicilian pasta sauce and a package of Tofu-Shirataki spaghetti noodles! I will round off dinner with four servings of broccoli and two servings of green beans (less the few beans and florets that I manage to sneak onto my DH's plate "as a garnish" -- which he should then eat happily!)

Lunch today is a bit more basic ... turkey and cheese on an english muffin, plus four HUGE servings of spinach-mustard greens-collard greens-turnip greens (TJ's sells these all mixed together in a 100-calorie bag!) plus a crisp, juicy apple drizzled with Walden Farms zero-calorie caramel dip. Breakfast was also pretty simple ... 2 english muffins, toasted (of course), plus a Boca vegan burger ... I broke it into fourths and put a piece on each muffin half with a little garlic powder and oregano! Anyway, my menu is all planned ... so here it is for Sunday!

My mom is home.  She got home on Wed. and my dad has been home with her since.  When he goes to the store, my two children ages 9 and 12 go over to her house.  She live directly across the street so if anything should happen I can be there to help very quickly. 

My mom has one side effect from her surgery still.  She keeps hearing a man singing, at first we were all pretty worried but a psycholigist saw her before she left the hospital and said it is not that unusual.  He said the voice could leave and it could stay, or it could leave and then return again.  He said the only time she should worry is if it tells her to kill someone.....lol.  The man in her head is singing church hymns so I don't that is a concern right now.

She is having visiting nurses come and help her with physical therapy for her back...thanks for askingSmile

Rivergrrrl my DH also left the headlights on today!  We were getting ready to head to Aldie's and realized the battery is dead.  Kind of a bummer since I need some more diet food, there is always tomorrow.  I will have to keep our car since my DH usually takes it to work, we only have one car.

Took my hike in the ccccccold!  27 degrees and very windy.  But I took my hand weights, and got my 4 miles in.  Met my SO at the hardware store; we did a little shopping, put gas in my car, and went to the grocery.  I slow-cooked some chicken to make a healthy BBQ for supper, smelled good cooking all day.  I noticed the local grocery has many of the Walden Farms sauces, so picked up some different kinds to try in cooking.

Made a delicious slaw for supper to go along with our chicken:
1 bag pre-cut cole slaw mix
1 bag fresh pea pods, snapped in half
1/4 cup sliced almonds, toasted
1 oz. goat cheese, crumbled
3 T. fat-free mayo
1/4 c. orange juice
3 T. white vinegar
ground pepper, Mrs. dash seasoning
Whisk the mayo, oj and vinegar in a small bowl.  Toss with the other ingredients and season.  You can leave out the goat cheese if you wish, it does add a richness that is enjoyable with the almonds.

For the first two weeks of December, have been averaging 1610 a day for calories, 30 grams of fiber/day, 2100 mg of sodium, and 200 mg cholesterol.  26% fat avg, 20% protein avg, and 54% carbs.  For the second half of the month, I'm going to lower the fat to 20%, up the protein to 30%, and lower the carbs to 50%, and drop the sodium some to below 2000 mg.  Fiber looks fine, and cholesterol too.  If I don't lose anything, I'm going to up my calories to 1750 average for the first two weeks of January.

Yikes only a week til christmas!  Well, all I have to do is wrap a few gifts and drop off a few goodie plates to clients, then can enjoy a few daze off.  Looking forward to going to mom's in the Blue Ridge Mtns of Tennessee; we'll have some beautiful epic hikes, and maybe ski at Ober Gatlinburg on the 24th if there's weather for it.

Boy it is so quiet in here I could here a pin drop!!  Where is everyone today??  Just checking in to say I stuck to my diet and did some leg exercises, but not a full body workout.  My legs are my main concern, so I am going to work on them daily and full body at least every other day.  I found out as I was planning tomorrows menu that I seem to know what I need now, because it figured out ok without having to tweak it at all.  Love it!! 

People at our church think they're being nice and kind and keep giving us sweets for Christmas.  Before I would have loved it but now I wish they would give us spinach instead...lol!! 

I am going to bed now after watching Rocky 1, 2, and 3 with my DH today.  Now I have the song "Eye of the Tiger" stuck in my head, this could make interesting dreams.....

Gosh, it's never occurred to me to give spinach as a gift, LOL!  (Makes note to send 4square spinach if we ever do a Going4Gold "secret pal" thing.)

Today we ran a few errands (bird seed, frame store, gas for the car, returned movies), filled bird feeders, raked leaves, had breakfast/lunch/dinner together, watched 1.5 rented movies (we watched 1/2 of one last night), and generally just recharged batteries since my wonderful DH has a long, busy work week ahead. We also played with our doggies and snuggled with our kitties.

I got a call yesterday that I'm getting an interview for a researcher position I applied for with the University of Michigan. (The job is local for me, they're doing a big research study in 42 U.S. cities.)  The interview will be sometime in the first 2 weeks of January (heaven knows WHAT I will wear for an interview!). If I get the position (it's part-time and temporary -- for the duration of the research project) ... there's a week of training in mid-February in Ann Arbor, Michigan.  I'm SUCH a California girl... so can only imagine (and shiver) at what Michigan weather is like in February. One of these days I will really need to dig out my coats and see if one fits, huh?

On Saturday, we went to the travel agency and plunked down deposit $$ for a 4-Day Alaska "Explorer Cruise" of the Hubbard Glacier (first week of May). I'm pretty excited, even though I get hopelessly seasick.  Right now, I am just curious to see what my weight will be for that cruise ... about 4.5 months from now.  Now we just have to hope and pray that my DH Ron won't be deployed to Iraq then! (EEEK! That would be dreadful!)

Anyway, it's 8pm and my calories are on track for the day ... with plenty in reserve for snacks this evening.  Hope you're all doing well.

How is your thyroid working?  You wrote to me about taking pills at one point, maybe you don't need them??  I know if my mom is taking to much thyroid medication she gets that way, restless, can't land and she usually does a lot of house work too.  She doesn't mind the housework part, but she doesn't like the feeling either. 

My husband has low blood sugar. Years ago, we learned he must eat regularly, and ALWAYS combine a fast-acting sugar/starch with a slow-acting protein if he got the 'shakes'. (Usually by 10 am until we learned.)

The way it works is kinda' like this...

You have a normal level that drops too low,

You eat a sugar/starch to raise it quickly-relief!

(Like diabetics have to, with a piece of hard candy)

But!!! Sugar/starch will also raise it into a spike-too high- then burn up fast!

You actually end up LOWER than you started...it was driving him crazy!

Until we added a protein, which is too slow to help you at first- but the protein will 'catch' you as the sugar/starch burns out.

This helps him get his normal level restored, and the symptoms end quickly.

He is why I lean to a higher protein diet, it maintains your blood sugar, satisfies him, and me, longer, and raises the metabolism in the extra work required to digest it. It has really helped me avoid hunger and build some muscle! Surprised

My youngest daughter has this, too, and her Dr. told her she MUST eat 5-6 small meals a day, to maintain her blood sugar, or become diabetic! Her pancreas is having to struggle too much if she doesn't...and, of course!, she isn't!

I wondered if you knew how it worked, and didn't want to bother you with what worked for him, if you already had a good plan or medication you liked. Since you asked-!!! I hope this might help. Low blood sugar I understand, but hormones....!!!! Does anybody really know what to do with those, lol??? Wink
