Side-tracked on Pantry NOW...!!! Trying to place some *ahem * Embarassed{{{Blushing}}} jars...??? Lol!!!

One of my soon-planned canning sessions is my FABULOUS 'Kitchen Sink' Soup... containing Sooooo many ingredients that you EXPECT to find my kitchen sink, too!!! SurprisedWink

MUST get back to bunch of multi-colored peppers waiting for me-- Bells and Sweet Banana Peppers, in light and dark greens, yellows, oranges, reds and multi-colored blends... Really quite Lovely! Laughing

I'll share a "Canning Joy's," picture show later through Photo Bucket-- I'm taking pictures, and a short video of the 25 jars of Gumbo Mix I finished tonight-- with their 'singing' included, as their lids cooled and 'popped'...! MY kinda' FUN!!! WinkLaughing

Soup... hmmm.... TOO HOT!!  I saw a recipe for white chili the other day and thought, gosh, that looks yummy.  But I know we wouldn't eat it.  It's just too hot here all the time.  Soup and the like are "cold weather" food... and we don't have any of that here.  SIGH!  Just imagine how much soup I can eat if we get sent to Germany!!

Speaking of which, hubs is testing for promotion again sometime in the week of September 9-12.  Please pray.  We won't know results until November, but this is a start in the right direction.

Let's see... Collected jars 6 years ago, from anyone who wanted to quit using them... about 1500 or so, lol! Surprised

We'd had a business close, leaving a mortgage we would have NEVER allowed... but were forced into... Soooooooo...... I found a farm that would allow you to pick produce on halves... you pick 2 buckets and keep one for free that way... I often picked okra, and swapped for peas, as they could give me the peas others picked and sell the okra that wasn't actually part of the halves's set up-- but needed to be picked-- and they loved me for doing that! I learned how to can foods after my freezers were full-- 2 freezers then. I put up 1000 quarts of food that year... and dreamed of doing meal-type stuff... when a lightning storm burned our home and shut everything down since then... but! the storm was an answer to prayer, as we'd sought God's help to get out of that awful mortgage... and the insurance for our home paid that mortgage and left enough for my husband to rebuild, as he could do the work himself...

We're still building back-- slowly but beautifully-- due to the injuries and financial limits my husband has had to cope with these last 3 years, so my wonderful canning kitchen is just beginning to be put to the test-- and is performing very well. Laughing

I also made deals with a large produce stand near me for older veggies and fruits and canned/froze a lot from that... he just closed for the season, so I have purchased produce twice now that needed urgent attention to preserve... I haven't counted the frozen stuff in my jar count! Laughing

I have shelves in a hallway for a wide selection of jars-- quite beautiful, too!-- and I'll share pictures of it soon, and have my awesome 12' high cabinets for jars-- empty and filled-- as well as a large pantry I'm clearing to set my new jars in... Laughing

While boiling hot-- or raw pack covered with boiling water added for some items-- you fill the jars and cap them... then you process them in canners... For acid foods like fruit, you use boiling water to cover the jars a couple inches and cook for the recommended times... For low acid foods-- most of my stuff-- like veggies and combinations of veggies or meal-type foods, you place the jars in heavy metal pressure cooker canners and process under 10 lbs. of pressure for the recommended times... 7 quarts or 10 pints per canner, and I am blessed with 4 canners and 2 stoves so I can save a LOT of time!!! I can do 28 quarts or 40 pints in close rotation as each is filled and started... Most 'meals' require 90 minutes, after reaching steaming stage, venting 10 minutes, placing a weight on each vent till pressure causes a jiggling of the weight to start, then counting 90 minutes of counting down while you slowly lower the heat till the weight maintains a 3-4 x per minute jiggling rate...!!! LOT'S of attention required, I promise! Tongue out

Storing can be many years... I'm still using some things I canned 6 years ago, and have older speckled Lima's that were given to me-- much older! Still good...! It is a Great way to keep things a long time, without paying a power bill... Laughing

Wax can be used with fruit jellies, etc... I've never done it, but you can. Laughing

Gifts are a Great way to use them! Laughing

I'll try to get a better set of pictures once these urgent items are all dealt with... I started taking pictures for the jars were so Lovely! and I was enjoying it all so much! Wink

P. S.-- Due to my Husband's serious injuries, his financial future is low-level only... We are currently praying for a Disability Hearing coming soon, where we Hope he'll be accepted and receive a low monthly income... This makes reduced produce without losses very valuable in stretching our living expenses... as well as gardening and our big greenhouse a'coming!!! We also share with folks at Church on fixed incomes, as they are being pinched terribly with the high gas and grocery prices, too... which will continue and worsen with the next 2 years as the results of it trickle down to us... for we know of farmers parking their tractors due to the price of fertilizer, and fuel, and folks selling their cattle now-- making false lower prices-- and keeping only what they can maintain without fertilizing their fields.. this will mean high priced beef later... Being self-sufficent is our way of coping and helping... Soooooo... I'm EXTRA Happy!!! Laughing

I like the sound of your cleaners-- I seldom try anything different due to the high cost-- and never have any way of knowing if I'll find them effective!!! If they WORK as well as you say, I'm interested!!! Wink
