I may be going on vacation soon... and I was wondering if I would be able to eat any types of foods that I wanted too, without gaining tons of weight. Of course when I come back from my short trip, I will go back onto my original diet plan. So, will thiss totally ruin my entire diet? And approx. how much weight do you think I would gain ??

It's hard to say. It depends on how long you're gone, what activities you do, what you eat, and how MUCH you eat of it.
I've heard stories of people coming back from vacations having LOST weight.
Yeah, you can't really lay on the beach all day, drinking high calorie drinks and not expect to gain weight. If you keep yourself busy sightseeing, hiking, walking, swimming or whatever, you'll have a better chance at maintaining and even losing weight.
Myself, I love to walk around the city where all of the locals go and of course hit the tourist attractions. If I don't have to drive, I won't cause it's a great way to see everything and get some exercise in.
I went to Hawaii on my honeymoon a couple years ago and I was SURE I was going to gain a lot of weight (I wasn't dieting at the time but I was aware of my weight). I ended up loosing a couple pounds because my hubby and I walked around the city, surfed, swam in the pool, hula danced, jumped the waves at the beach, walked along the beach (GREAT calorie burner as walking in the sand is extra effort), did a ton of shopping and trying on clothes.
Afterwards I also realized that our dinners there were VERY long and we ate slow - talking and laughing the whole time. When you eat slow, you eat less. Also, if you're going somewhere warmer (I'm in New England) and tropical - sometimes fried food is just gross in the heat! In Hawaii, we wanted to try new things so we ate a lot of exotic fruits and fish made in different ways.
Unfortunately, mattee, since you've been crash dieting on 1000 cals a day you're going to balloon on holiday, guaranteed. If you do the sensible thing and up your calories between now and your holiday to a more normal level.... 1900-2100 cals or so.... then you should be able to enjoy your holiday much more.
