"Good for you" bread machine recipes w/ nutritional info?

Quote  |  Reply

Anyone?

I just got new paddles for my machine, and made a loaf of white bread last night that I gladly would have inhaled on my own (but I didn't!!)  I'm looking for healthy recipes I can try and not feel guilty about eating... the white bread I made had little nutritional value lol

Actually, since flour is usually enriched, that white bread is pretty nutritious.  It lacks fiber but has the vitamins.

To make a healthier white loaf, try the Cornell formula.  Into the bottom of your 1 cup measure, put 1 teaspoon each of non fat dry milk powder, wheat germ, soy flour and, if desired, wheat or oat bran.  Fill the cup with flour and add to your recipe.

That's a fabulous idea!  I think I'll do that tonight.  Thanks!

When I make bread I add a variety of seeds to give it some bite...  My regular recipe for a medium-size loaf is

14oz stoneground wholemeal flour

1 tablespoon milk powder

good-sized knob of butter or a tablespoon olive oil

1 teaspoon sugar

1 teaspoon salt

290ml water

sachet of easy-blend yeast

2  tablespoons mixed seeds.  Caraway is particularly nice.  Also pumpkin, sunflower, sesame, poppy, linseeds....

Works out about the same cals per ounce as regular wholemeal.

I use this book

nutrition information at the bottom of every recipe.
