Does anyone know where I can find some really good, healthy, easy crockpot recipes?  I am not sure where to look and I am sure a thread had to have been started on this at one time or another.

May not all be healthy choices, but this site is awesome for recipe hunting!  I recently tried the Beef Stew and yum! ( http://allrecipes.com/Recipe/Slow-Cooker-Beef -Stew-I/Detail.aspx ) Lotsa veggies and I cut down a bit on the meat. Its a good hearty meal on a chilly day and not overly damaging on the fat/calories.

Google it--a friend of mine said they had over 1,500,000 there.  I usually just dump in what ever I have or sounds good.  No recipe needed.Cool  I stand corrected on the Google numbers.  I just checked to make for sure and it says that there are over 4,050,000 recipes.

A jar of salsa dumped on chicken breasts.  Eat the chicken breasts one night then the next night shred the chicken to make chicken tacos - yum!

Depending on the size of your crock pot. I have two big ole 5 quarts (I think; they are the biggest ones; all white sold at Kmart). Anyhow. With St. Paddy's Day approaching you'll need this one:

  • I go to Safeway, they have a Corned Beef Brisket... it's about $10. Buy that; wash it, and take out the little seasoning packet.
  • Cut up 3-4 smaller red potatoes, and 3 medium carrots. Put them on the bottom of the crock (FYI: all starchy or hard veggies go on bottom)
  • Cut up 3 stalks celery, 1/2 yellow onion, and throw in a whole bulb of garlic. on top the potatoes
  • Throw the meat over top, sprinkle the seasoning packet (it's literally peppercorns, and bay leaves)
  • Pour enough water in until it reaches 1/4 up the meat (about 4 cups in my crock)
  • Cook on low for 6 hours *don't stir, don't remove the lid*
  • Come home to a yummy smelling house; quarter up some green cabbage and smoosh it into the sides of the crock (most of the veggies will have wilted and aren't nearly as hard as they were 6 hours prior).
  • Cover and cook on low 2.5 hours or until you reach the desired doneness of the cabbage.
  • Pull out the corned beef brisket and flip it over onto a cutting board. SURPRISE!! All the fat is stuck to the bottom... for some reason it separates this way but retains all the yummy flavors in the meat :). Scrape off the fat and you have some very trim corned beef.
  • Drain the water/liquid out the crock (or use it as great stock for gravies).
  • Serve the beef w/ the veggies, and maybe a crunchy roll or two :)
  • Enjoy!

Btw, I cook all the time outta this thing, and I can give you a ton of great advice on good and not-so-good recipes. One thing that's nice for holiday gift baskets or gifts in general is slow cooked candied nuts. Oh so yum and very nice.

I am making salsa chicken in my crockpot today:

1 lb of cubed chicken breast
Jar of medium salsa
1 cup of chicken broth

Add all that to a crockpot.  At the end you could put some light sour cream in to thicken. Also, at the end I sometimes add some corn or black beans.

Serve over rice!

Very yummy- and easy!

Try my vegetarian Chili : ) you won't even miss the meat, I promise.

Less than 300 cals per bowl too

Lower Fat Crock Pot Sheppards Pie

Ingredients:

4-5 Quart Crockpot

Instant mash potatoes (prepared according to box, using skim milk)  Prepare enough to cover thickly, approximately 5-6 servings.

1 can cream of mushroom soup

1 drained can of whole kernel corn  (can use frozen)

1 drained can of green beans or peas (can use frozen)

1 lb extra lean ground turkey (or extra lean ground beef can be used)

1 Cup Low Fat Shredded Cheddar Cheese

Onion Powder, Salt, Pepper to taste (or any seasonings of your choice)

Directions:

In a large skillet, brown the ground turkey and seasonings and drain well.  Add soup to the meat and stir together.  Pour into the bottom of your crockpot.  Pour the corn and green beans over the meat mixture.  Next layer the prepared mashed potatoes on top and smooth it out.  Cook covered on low 2-3 hours, then uncover and keep on low for about 30 minutes to let the potatoes brown a little on top. Top with cheese and recover and let it cook long enough for the cheese to melt.

easy and amazing:

ingredients are for one serving, double or triple, ect for more servings

1 chicken breast

1/2 lb red potatoes, quartered or sliced- however u like

1/2 cup romano parmesan vinegarette or any italian or cheesey vinagrette

italian seasoning

any veggies you want

high for 5-6 hours, soo good

I bought a massive 7 litre (nearly 2 US gallon) crock pot a few years ago, and use it to make stuff and can it.  One time, while teaching my son how to make chili, we got all engrossed in a video game and forgot the chili was in the crockpot.  We left if overnight on low and it ended up cooking for 24 hours.  It was fantastic!!!...lol.   So now I cook all my chili for 24 hours..give it a shot...

Classic Pot Roast

Use a lean cut, such as top round.  Season the meat with salt and pepper and generously coat with Wondra flour.

Toss large pieces of carrot, celery and quartered onions and quartered potatoes (leave the skins on) with more flour, just to coat, and place in the pot.

Put the whole piece of meat on top.

Pour in beef broth or low sodium bouillion to come up over the vegetables and about 1/4 of the way up the sides of the meat.

Add a couple of bay leaves, some peppercorns, and any other fresh or dried herbs you like.  I always add about a tablespoon of Worcestershire sauce.

Cook on low for 8 to 10 hours.  Remove the meat and let rest for about 10 minutes, covered with foil, before slicing.  Remove the vegetables and arrange on the platter with the sliced meat.  Spoon the juices from the pot over and serve the remaining juices in a gravy boat.  They should be thickened because of the flour.

One of my favorite things to do is find a lean cut of pork roast.  I season with kosher salt, peper, smokey pepricka, garlic powder, dried parsly, and Emerel Seasoning.  place in the croc pot and add 1/2 cup water 1/2 cup wine and a can of mexican stewed diced tomatos.  Cook on low 6-9 hours depending on roast size.  Our family eats the roast plain the first night then the next night uses the rest to make burritos  by shreding the remianing meat place in low carb tortilla shells with low fat cream cheese fry in canola oilSmileTop with lettus, tomato, cucumber olives and fat free sour cream & salsa.  Two days worth of eats with very little effort. 

Just bumping this one up.

I have tried all of these recipes now. Salsa chicken being my fave so far. Veggie chili a close second.

Let's see if we can dig up a few more "low cal" one crock pot supper ideas. :)

I bought my good friend the Taste of Home: Slow Cooker Recipe Book and she makes meals out of it everytime I am over.  Haven't come accross a bad meal yet, infact it contains the recipe for what is now my favorite lasagna dish.

What kind of flavors do you like?  I have several great recipes for irish lamb stew, tagine-style chicken, middle eastern lamb, etc I could add to here if you like :)

My niece gave me this one.

2 cans of diet coke
3 pounds of chicken
1 cup of rice, added an hour before serving

Let simmer all day.  Yummy!
