Does anyone know where I can find some really good, healthy, easy crockpot recipes?  I am not sure where to look and I am sure a thread had to have been started on this at one time or another.

I have a 6 qt slow cooker, so you may need to adjust the amounts.  Also works great in a large dutch oven.

Irish Lamb Stew
Serves 6 hungry folks.

1.5-2.0 lbs lamb stew meat
1 cup pearl barley
3 good sized russet potatoes, rough chop
3 large carrots, peeled, rough chop
2 large onions, rough chop
2-3 cloves garlic
4-5 sprigs fresh thyme
4-5 springs fresh rosemary
2 qts stock (veggie, beef, lamb, whatever)
1 bottle guinness stout, room temp
1/4 cup fresh parsely, chopped
salt and pepper to taste
flour for dredging

Cook barley in 3 cups of your stock for 20 minutes.  Meanwhile, season stew meat and lightly coat with flour.  Cook in a large skillet just until nicely browned.  Transfer to slow cooker.  Sautee onions, garlic, and carrots in same skillet 3-4 minutes.  Transfer to slow cooker.  Add potatos to slow cooker, barley, stock, and guinness. Tie thyme and rosemary together and throw in, nestling it in the liquid.  Put the lid on and let it go 6-8 hours on low.  Season to taste before serving and stir in fresh chopped parsley.

Seasoning mixture - to your taste - salt, pepper, cayenne, cumin, poultry seasoning, onion powder, garlic powder, celery salt, and anything else that you like.  Or use a bottled dry spice rub or mixture such as Emeril's Essence.

Rub the chicken inside and out with a generous amount of this mixture.  Stuff a few cloves of garlic, crushed, a quartered onion, lemon slices and a handful of parsley inside the chicken. 

Put the chicken into a plastic bag and refrigerate overnight.

In the morning, take it out of the bag and put it into the pot. 

Do not add liquid!  I repeat - DO NOT ADD LIQUID1

Cook on low, 8 to 10 hours

The chicken will be falling off the bone tender and very juicy.  the pot will be about a quarter full of delicious juices.

This is great as is, and the leftovers make great pulled chicken sandwiches.  Add some BBQ sauce to the juices and you have a real treat.

You can make this lower in fat by removing the chicken skin before seasoning and cooking.  It will not dry out.
