Good fish recipes?

Quote  |  Reply
I'm trying to incorporate more fish into my diet, but I've never cooked any fish that wasn't fried. Does anyone have any good, healthy recipes?

Thanks!

lightly spray foil with non-stick spray, season fish as desired - I like a lemon juice, garlic and basil.  Wrap fish in the foil and either bake or grill but only for 10-15 minutes, fish doesn't take long.
Wrap the fish in foil with some lemon slices and season as you like.  Seal it up and bake or grill it for about 20 to 30 minutes, depending on the thickness of the fish.  It comes out moist and flavorful without any added fat.

edited to add: I'm sorry! I guess I didn't read the post before mine.  It really is the nicest way too cook fish, and it's nice to see that someone else likes it too.  My cooking time is for thick fillets or steaks of salmon or tuna.  You have to be careful not to over cook.
thank you! i wish i had know how easy and good it was. i'm cooking some fish tonight.
Very easy one.  i tried dipping the fish in egg/milk first once, the crust just slid off, so don't!

1/2 cup grated Parmigiano-Reggiano cheese
4 boneless rainbow trout fillets (or Tilapia)
4 lemon wedges

Spread cheese in a flat-botomed dish large enough to hold a trout fillet.  Dredge each fillet, flesh side down, in the cheese.  Arrange the fillets, flesh side up on a clean dry work surface and coat with additional cheese.  Heat a heavy nonstick skillet sprayed lightly with nonstick cooking spray over medium-high heat.  Arrange the fillets, flesh side down and not touching, in the hot skillet, cook for 3 minutes.  Turn the fillets once; cook for 2 minutes longer.  Serve hot with lemon wedges.  Accompany fish with a green vegetable, rice, or potatoes.

It's good broiled too.  You can brush it with a little olive oil & lemon or lime juice and just pop it under the broiler about 1" from the heat.  It only takes about 7 or 8 minutes.  Just be careful not to over cook.  It will get just a little golden brown on top.  I don't turn it because I always break the fillet.  I've broiled it on top of some fresh herbs and that's very nice.
hm, well coming from an asian background, we never use the grill or oven at my home. the main way of cooking fish in our household is steaming or simmering.

here is my fave way of steaming:
in a shallow bowl, add some salt & sugar & chilli sauce to both sides of the fish. top with lots of fresh ginger that's chopped to tiny matchsticks/slivers. Next add some fresh minced garlic. Next drizzle on some soysauce & oil. You need a bit of oil. Put the bowl in a shallow fry pan filled with water. cover and steam til its cooked (depends on the thickness of the fish). Next top the fish with some freshly sliced green onion or cilantro.

An easier way is to just coat both sides of the fish with black bean sauce/paste. Then top with fresh ginger, drizzle with a bit of oil & steam.

Another fave way of cooking (im gonna be making this tomorrow) is fish (or any other seafood) with tomatoes.
In a frying pan, lightly fry minced garlic & ginger with a bit of oil til it's fragrant. Turn the heat up and add in the fish but cubed or cut into big bite size pieces. The idea is to just sear the fish a tiny bit. Then add in some chopped fresh or canned tomatoes.  Season with salt, pepper, sugar. Simmer til the fish is cooked and the tomatoes have softened. You also add in an egg so it's kinda like creamier (like egg drop soup).  I usually eat this over rice, since it's quite saucy with the tomatoes.
We eat alot of tilapia. Often, we just spray a pan with Pam, and cook down fresh tomatoes and some green olives, sliced. Once some of the liquid is reduced, I'll add the tilapia filets and presto - mediterrean fish.

Extra easy and no clean up!  Bake it in foil.  Season it well, any way you like, seal into a packet and bake at 350 f for 15 to 20 minutes, depending on the thickness of the fish.  Comes out flavorful and juicy.  If it's a white fish, you might want to sprinkle it with paprika for color because it will be pale.

I steam my fish with the foil packets with red onions and then based on the type of fish, seasonings.  The red onions really give fish a nice flavor.
