why don't you put it in your food log and check the analysis. To me it sounds really good, but I don't eat meat.
have a salad instead of the potato save some carbs and get some greens!! or have broccoli or spinach or carrots....

if you eat the potato, make sure its clean and eat the skin, thats where all the nutrients are and the fiber.

yum chicken :)
I agree with drea99. You don't need to have a potato AND two slices of bread. Have some veggies instead.
I would add some honey dijon mustard to the chicken sandwich...it will add a little pizzazz to it...I will have to try this...thanks for the idea!
This sounds good to me, however, I don't eat meat.

One suggestion I have is to just have one slice of the bread and toast it. Cut a bit of the chicken breast off and slice it up. When the bread is toasted, cut the slice in half and make a half sandwich. Eat what's rest of your chicken breast on the side. It will seem like you're eating more!

I also agree with replacing the potato with salad (watch out for the dressing) or veggies.
